To create a delicious and easy-to-make dish, start by carefully separating the yolk from the white of each egg. It is important to ensure that no traces of yolk remain in the white, as the latter needs to be beaten until very firm. Add salt to the white, to taste, and use an electric mixer or a whisk to beat it. Continue mixing until the white becomes so firm that it forms peaks, and when you lift the whisk, the white remains stable.
Once you have achieved perfectly beaten egg whites, take a spoon and start transferring them into ramekins, filling them halfway or a little more. Use the back of the spoon to create a small indentation in the middle of each portion of egg white. This indentation is meant for the yolk, which will add a rich flavor to your dish. Carefully place a yolk in each ramekin, sprinkle a little freshly ground pepper on top, and add grated cheese, choosing between Gruyère, Parmesan, or Pecorino, depending on your preferences.
After adding the cheese, cover everything with the remaining beaten egg white, taking care not to leave any gaps. Preheat the oven to a medium temperature and place the ramekins inside. Bake them for 5-10 minutes, monitoring closely to avoid burning. When the surface becomes golden and crispy, it is time to take them out of the oven. It is recommended to serve them immediately, to enjoy the light and fluffy texture of the egg white combined with the creaminess of the yolk. If desired, you can add an extra sprinkle of pepper or a few shavings of cheese on top.
Depending on the occasion, you can adjust the portion sizes. If you are preparing this dish for breakfast, opt for larger ramekins and add two eggs. If serving it as an appetizer at a party, choose smaller portions and bake them just before serving to ensure they are warm and fresh. With a baking time of about 6 minutes, you will achieve a perfectly golden crust, ready to be enjoyed. This dish will not only impress with its appearance but will also delight the taste buds, surely becoming a favorite at your meals!
