To prepare a culinary delight that will impress both family and guests, we will start with boiled eggs. Choose fresh eggs, preferably from local farms, for a more intense flavor. First, boil the eggs for about 10-12 minutes in a pot of boiling water. Once boiled, place them under a stream of cold water to stop the cooking process and make them easier to peel.

Once the eggs have cooled, carefully peel them and cut them lengthwise, creating two perfectly equal halves. In a bowl, scoop out the yolks with a spoon, being careful not to damage the egg whites. These yolks will form the base of our filling. Add 100 grams of canned tuna, preferably from a can, but make sure it is of good quality.

Incorporate 30 grams of soft butter, which will add a creamy texture to the filling. Finely chop a few sprigs of fresh parsley and add them to the mixture to bring a note of freshness. Squeeze the juice from a lemon, being careful to remove the seeds, and add it to the mixture. Mix all the ingredients well until you obtain a homogeneous filling, which you will season with salt and pepper to taste.

Now, fill each half of the egg white with this delicious filling, then join two halves together, thus forming a reconstituted egg. These culinary jewels will be covered with a crispy layer, so prepare a bowl with flour, another with beaten egg seasoned with a pinch of salt, and a bowl with breadcrumbs.

We move on to the breading stage: take each reconstituted egg, wrap it in flour, then dip it in the beaten egg, and finally coat it in breadcrumbs, ensuring that each part is evenly covered. To fry them, heat a generous amount of oil in a pan over medium heat. Once the oil is hot, add the breaded eggs, frying them on each side until golden and crispy, about 3-4 minutes on each side.

These delicious eggs can be served as an appetizer, alongside a selection of tapas, or as a main dish, accompanied by a side of risotto rice. For an extra flavor boost, accompany everything with a creamy tartar sauce that will perfectly complement the flavors. Enjoy and remember: good appetite should be the order of the day!
