Chocolate Stangluri: a sweet and fluffy delight

If you're looking for a cake that combines the light texture of meringue with the richness of chocolate, you've found the perfect recipe! Chocolate stangluri is a dessert that will not only delight your taste buds but also impress your guests. This cake, with its exotic name, has quickly become one of my favorites, and I fondly remember the moments I prepared it with my loved ones. I would like to thank Mihai for the inspiration, but let's begin our culinary adventure!

Preparation time: 30 minutes
Baking time: 40 minutes
Total time: 1 hour and 10 minutes
Number of servings: 12

Necessary ingredients:

For the base:
- 10 egg whites
- 250 g powdered sugar
- 300 g ground walnuts (recommended: Romanian walnuts, known for their intense flavor)

For the cream:
- 10 egg yolks
- 150 g sugar
- 80 g milk chocolate (high-quality chocolate makes a difference)
- 5 tablespoons cocoa powder (make sure it's good quality for an intense flavor)
- 200 g butter (at room temperature, for better incorporation)
- 2 packets of vanilla sugar
- 1 tablespoon powdered sugar

For decoration:
- Cappuccino whipped cream (optional, but recommended for a delicious contrast)
- Chocolate stars or grated chocolate

Preparation:

Step 1: Prepare the cream

We start with the cream, as it needs time to cool. In a large bowl, beat the egg yolks with the sugar until the mixture becomes light in color and creamy. Add cocoa and mix well.

Place the mixture in a bain-marie over low heat, stirring constantly to avoid lumps. Make sure not to let the cream boil. When it thickens (about 10-15 minutes), let it cool.

Meanwhile, in another bowl, beat the butter with the powdered sugar, grated chocolate, and vanilla sugar until fluffy. Once the cream has cooled, gradually incorporate it into the butter mixture, mixing carefully.

Step 2: Prepare the bases

Preheat the oven to low heat (170°C). In a clean bowl, beat the egg whites with a pinch of salt until frothy. Gradually add the sugar, continuing to beat until a firm meringue forms.

Now, fold the ground walnuts into the egg white mixture using a spatula, mixing from the bottom up to avoid losing the air in the egg whites. This step is essential for achieving fluffy bases.

On a baking tray lined with parchment paper, spread half of the egg white mixture and bake for 20-25 minutes, or until the edges are lightly browned. Check with a toothpick: if it comes out clean, the base is ready. Repeat the process for the second half of the mixture.

Step 3: Assemble the cake

Once the bases have completely cooled, it's time to assemble the dessert. Place the first base on a serving platter. Spread 3/4 of the cream on top, then add the second base. Finish by spreading the remaining cream on top.

Let the cake chill for a few hours, ideally overnight, to set well. Before serving, decorate with cappuccino whipped cream and chocolate stars or grated chocolate.

Practical tips and tricks:

1. When grinding the nuts, avoid using a meat grinder, as they can become oily. Opt for a food processor or a nut grinder.
2. Make sure all ingredients are at room temperature. This will help with better emulsification and provide a smoother texture.
3. Experiment with the chocolate version: you can use dark chocolate or white chocolate for a different taste.
4. If you want to try a variation, add a few drops of rum or orange essence to the cream for an extra flavor boost.

Nutritional benefits:

This cake is not just a treat, but also a source of nutrients. Nuts contain healthy fats, proteins, and antioxidants, while milk chocolate provides calcium, and egg yolks contribute vitamins A, D, and B12.

Frequently asked questions:

1. Can I use another type of nut?
Yes, you can use almonds or hazelnuts, but the taste will be different. Make sure to grind them well.
2. How can I store the cake?
It is recommended to keep it in the refrigerator in an airtight container to maintain its freshness.
3. Can this cake be frozen?
Yes, you can freeze the assembled cake, but it's better to decorate it after thawing to keep its attractive appearance.
