Step 1: Preparing the dough
Start by sifting the flour into a large bowl. This technique helps aerate the flour, resulting in a fluffier dough. Make a well in the center of the flour and add the cubed margarine. Ensure the margarine is at room temperature for easier incorporation into the dough. Add the pinch of salt and gently mix the ingredients with your fingers until you achieve a texture similar to wet sand.

Once the dough is ready, let it rest for 10-15 minutes, covered with a damp towel. Meanwhile, cut the Turkish delight into small cubes. Preheat the oven to 180°C. On a floured surface, roll out the dough into a thin sheet, then cut it into triangles. At the base of each triangle, place a cube of Turkish delight and roll the dough, forming the rugelach. Place the rugelach on a baking sheet lined with parchment paper.
Step 4: Baking
Bake the rugelach in the preheated oven for 20-25 minutes, until they turn golden. It is important not to let them brown too much, as they will become dry. Allow them to cool on a wire rack.
