Spaghetti with Artichokes
To prepare a culinary delight with artichokes, we first need to carefully handle these spiky vegetables. So, we take the four artichokes, place them gently in a bowl, and rinse them under a stream of cold water to remove impurities. It is important to handle them with care, as artichokes have thorns that can be unpleasant. Once we have washed them, we start to clean them. We begin by pulling off the outer leaves, being careful to leave the inner part, resembling a bulb, which is more tender and tasty. After removing the tough leaves, we cut off the top of each artichoke to eliminate the spikes. Then, we cut them in half and carefully extract the fluffy core from inside.
Once we have finished cleaning all four pieces, we cut off the stems and place them in a bowl with water and lemon juice to prevent them from browning. The preparation of the sauce begins with the onion, which we chop finely and add to a pan with heated olive oil. With a wooden spoon, we stir the onion in the hot oil, letting it sauté for 2-3 minutes until it becomes slightly translucent. We then add the finely chopped celery stalk, which will add a delicious flavor to the dish. After a few moments, we add the tomatoes in tomato sauce, mixing well to combine the flavors.
While the sauce is simmering, we return to the artichokes. We take them out of the water, cut them into smaller pieces, and add them to the pan, covering them with enough water to fully submerge them. We add salt to taste and let it simmer on low heat until the water reduces. A few minutes before it's ready, we add the sliced garlic, olives, and oregano to intensify the flavors. It is important to add a little more water if necessary to avoid leaving the sauce too dry.
Alongside the sauce, we also take care of the pasta. We boil the spaghetti according to the package instructions, then drain it. Once the artichoke sauce is ready, we add the spaghetti directly to the pan, carefully mixing to combine the ingredients. Serve hot, with a drizzle of olive oil on top, and the rich taste of artichoke will surely surprise! Enjoy your meal!
