Country chicken
The vegetables are cleaned carefully, making sure to remove any impurities or useless parts. The onion is finely chopped, and the carrot is grated or diced, depending on preferences. This step is essential, as uniformly cut vegetables will cook evenly and contribute to a pleasant texture in the final dish.
In a large pot, add a tablespoon of olive oil or sunflower oil, allowing it to heat over medium heat. Once the oil starts to sizzle gently, add the chopped onion and grated carrot. These vegetables will take on a golden color and a delicious aroma that will fill the entire kitchen. Stir occasionally to prevent sticking and ensure even browning.
Meanwhile, wash and chop the bell pepper, which will add a sweet taste and vibrant color to the dish. The bell pepper can be sliced thinly or diced, depending on personal preferences. After the onion and carrot have started to soften, add the chopped bell pepper to the pot. Mix well to combine the flavors and let it cook for 5-7 minutes until all the vegetables become tender.
Once the vegetables are cooked, we can add our favorite spices, such as salt, pepper, sweet paprika, or herbs like basil or oregano, to enhance the flavor of the dish. If we want a more complex dish, we can also add crushed garlic or other vegetables like zucchini or eggplant.
Finally, we can add a source of protein, such as chicken, pork, or tofu, to turn this dish into a complete meal. If opting for meat, it should be diced and cooked together with the vegetables until well done.
This simple and versatile recipe is perfect for a quick and healthy meal, serving as an ideal base to experiment with different ingredients and combinations. Serve the dish hot, alongside a side of rice or fresh bread, and enjoy every bite!
Ingredients: We need chicken meat - I used chicken thighs - bell peppers, tomatoes, onion, garlic, spices (salt, pepper, paprika, bay leaves), a little oil, and water. And some finely chopped parsley - but I didn't add it because I forgot to buy it.
