To prepare a delicious stuffed pepper recipe, we start by choosing the prettiest peppers, preferably 10-12, that are as round as possible and have a vibrant color. This will not only add aesthetics to the dish but will also contribute to the final taste. The first step is to cut off the tops of the peppers with a knife, being careful not to damage them, so that we can fill the peppers with our savory filling. After removing the seeds, it is essential to wash the peppers well under a stream of cold water, and then let them drain to remove excess water.

In a large bowl, we put the minced meat (pork, beef, or a combination of both) and add the cleaned and well-washed rice. It is important that the rice is washed well to remove the starch, so that the filling does not become sticky. We season the mixture with salt, pepper, a teaspoon of sweet paprika for a touch of color and flavor, and add finely chopped parsley and dill. We mix all the ingredients with a wooden spoon, ensuring that they are well homogenized and that each bite will be full of flavor.

Once the peppers are filled, we place them next to each other in a deep pot. It is important that the peppers are placed tightly together to maintain their shape during boiling. Then, we put tomato tops over each pepper, which will not only help keep the filling in but will also add a delicious taste. We pour water into the pot, enough to cover the peppers, then add two bay leaves for extra flavor. We cover the pot with a lid and let it simmer on low heat for about an hour.

After this interval, we add the tomato paste, mixed with a little flour to thicken the sauce, diluted with a few tablespoons of water. We let it boil for another quarter of an hour, stirring occasionally to prevent sticking. If you want a slightly browned crust and a more concentrated sauce, you can transfer the peppers to a baking dish and leave them in the oven for 20-30 minutes. In the end, you will have a fragrant dish, with a delicious combination of meat and rice, all dressed in a tempting tomato sauce. These stuffed peppers are perfect for a family lunch or dinner, and their taste will surely leave you with pleasant memories. Enjoy your meal!
