Number of servings: 12

Ingredients

For the sponge:
- 3 fresh eggs
- 6 tablespoons of sugar
- 6 tablespoons of flour
- 1 vial of rum essence
- 1/2 packet of baking powder
- 1 tablespoon of dark cocoa

For the cream:
- 200 ml of liquid cream
- 150 g of creamy yogurt
- 1 packet of gelatin (approx. 10 g)
- 3 tablespoons of vanilla powdered sugar
- Frozen or pitted cherries from compote (approx. 200 g)
- 1/2 vanilla bean (or a vial of vanilla essence)

For the syrup:
- 150 g of sugar
- 200 ml of water
- Rum essence (to taste)

For the glaze:
- 200 g of dark chocolate
- 100 ml of liquid cream
- 50 g of butter
- 100 ml of whipped cream with a tablespoon of sour cream
- Cherries (for decoration)

Step by Step

1. Preparing the sponge

Start by preheating the oven to 180°C. In a large bowl, beat the eggs with the sugar using an electric mixer until the mixture becomes creamy and doubles in volume. This step is essential for obtaining a fluffy sponge!

Sift the flour together with the cocoa and baking powder, then gradually add them to the egg mixture, gently folding with a spatula to avoid losing air. Add the rum essence and mix well.

Bake the sponge in a round-bottomed pan (12x31 cm), greased with oil and dusted with flour. Bake in the oven for 20-25 minutes. Check if it's done using the toothpick test: insert a toothpick in the middle – if it comes out clean, the sponge is perfect!

After baking, let the sponge cool completely on a rack.

2. Preparing the syrup

In a saucepan, caramelize the sugar over low heat, stirring constantly to prevent burning. Once the sugar is caramelized, gradually add the water, stirring continuously until it dissolves completely. Add the rum essence and let the syrup cool.

Once cooled, cut the sponge in half and soak each half with the rum syrup.

3. Preparing the cream

Hydrate the gelatin in 100 ml of cold water, then heat it over low heat until it becomes liquid (without boiling!). In another bowl, whip the liquid cream until stiff peaks form. Add the creamy yogurt, vanilla powdered sugar, and vanilla seeds (or vanilla essence), mixing well.

Incorporate the cooled gelatin into the whipped cream, carefully mixing to avoid losing volume.

4. Assembling the cake

Line the pan in which you baked the sponge with plastic wrap. Place the first half of the soaked sponge, followed by the whipped cream. Bury the cherries in the cream, then place the other half of the sponge, which is soaked again. Cover with plastic wrap and refrigerate for at least 2 hours, or until the cream sets.

5. Preparing the glaze

In a saucepan, add the chocolate, liquid cream, and butter. Heat over low, stirring constantly until you achieve a smooth cream. Let it cool slightly, then pour the glaze over the cake, smoothing it out with a spatula.

6. Decorating

Grate the remaining chocolate on top and decorate with whipped cream mixed with sour cream and cherries. You can also add a few mint leaves for a fresh touch!

Useful tips

- About cherries: If using frozen cherries, make sure to let them thaw and drain well before adding them to the cake. They will add a delicious tartness that perfectly complements the chocolate.
- Gelatin: It’s important not to boil it, as it will lose its gelling properties. Make sure to hydrate it correctly!
- Variations: You can replace the cherries with other berries, such as raspberries or blackberries, to create a cake with different flavors.
- Serving: The "Black Forest" cake pairs wonderfully with a scoop of vanilla ice cream or a strong espresso, which will perfectly contrast the sweetness of the dessert.

Nutritional benefits

This cake offers both carbohydrates from sugar and flour, as well as fats from cream and chocolate. The cherries provide vitamins and antioxidants, making this dessert a healthier choice when consumed in moderation.
