Start by cleaning the bell peppers of seeds, cutting off the top to make room for the filling. The large tomatoes should also be cleaned of seeds, while the small ones will be sliced thinly.
2. Preparing the filling:
In a pan, sauté the finely chopped onion until it becomes glassy. Add it to a large bowl along with the minced pork, washed rice, 100 g of tomato paste, thyme, salt, and pepper. Mix well until you obtain a homogeneous composition.
3. Filling the vegetables:
Using a spoon, fill the bell peppers and large tomatoes with the meat mixture, leaving a little space at the top for the rice to swell during cooking. Place the slices of small tomatoes on top like a lid, to retain moisture and add extra flavor.
