To prepare a savory and elegant dessert, we start with a sponge cake base, which will be the foundation of our delicious cake. In a large bowl, we combine the eggs and sugar, beating them well with a mixer until the mixture becomes frothy and triples in volume. We gradually add the sifted flour, gently mixing with a spatula to avoid losing air. Finally, we incorporate vanilla essence for extra flavor. We pour the mixture into a baking tray lined with parchment paper, making sure to level it evenly. We bake the base in a preheated oven at 180 degrees Celsius for about 25-30 minutes, or until a toothpick inserted in the middle comes out clean. After baking, we let the base cool completely on a rack.

Meanwhile, we take care of the delicious cream that will complement this dessert. In a saucepan, we bring the milk to a boil, then add the pudding powder according to the instructions on the package, stirring constantly to avoid lumps. Once the cream has thickened, we let it cool to room temperature. In a separate bowl, we hydrate the gelatin in 2-3 tablespoons of cold water, letting it absorb the liquid for about 10 minutes. In another container, we whip the butter with the powdered sugar until it becomes creamy and airy. Once the pudding cream has cooled, we add the hydrated gelatin, mixing well to incorporate it, then combine this mixture with the whipped butter, gradually adding a tablespoon of cream at a time.

Now that we have both the base and the cream, we start assembling. We spread an even layer of cream over the sponge cake base, making sure to cover the entire surface. We cut the bananas in half lengthwise and carefully place them over the cream on the base, making sure to distribute them evenly across the surface to provide a fresh and delicious taste. Over the bananas, we pour the remaining cream, leveling it with a spatula to achieve a uniform appearance.

Our dessert needs to chill for a few hours; ideally, we should leave it overnight for the cream to set perfectly. Traditionally, a chocolate glaze can be added on top, but I opted for a thinner glaze from Dr. Oetker, which I carefully poured over the cake. As a final decorative detail, I sprinkled coconut, which adds a pleasant contrast and extra texture. This dessert not only looks wonderful, but it is also absolutely delicious, perfect for any special occasion. Enjoy every slice!

 Ingredients: For the pastry: 7 eggs, 250 g sugar, 110 g flour, 1 sachet baking powder, flavorings. For the cream: 1 sachet vanilla pudding powder, 150g icing sugar, 1 packet butter, 400 ml milk, 1 sachet gelatine; 6-7 bananas (depending on size). For decoration: chocolate icing or melted chocolate, 1 tablespoon coconut (optional)
