To prepare a delicious meat aspic recipe, it is essential to carefully follow each step to ensure that the final result meets your expectations. We start by choosing a suitable pot in which to boil the meat. Choose beef or pork, depending on your preferences, and add cold water, filling the pot to about two-thirds. Add a teaspoon of salt and turn the heat to a low level, ensuring that the water heats up gradually.

After a few minutes, you will notice the foam forming on top. It is important to remove it to obtain a clear liquid. Once you have cleaned the foam, add a whole carrot, which will add flavor and color to the broth. Let the meat simmer for a few hours until it easily separates from the bone, and the broth becomes slightly sticky. It is time to add the crushed garlic, which will intensify the flavor.

After the meat is cooked, carefully remove it along with the carrot and place it on a plate. Allow it to cool slightly, then peel off the skin, being careful to handle it gently as it is still hot. Once you have cleaned the meat, place the pot outside on the balcony, where the temperature is lower. This method serves two purposes: the first is that, once the broth cools, the fat will rise to the top, and you can easily remove it; the second is that it helps check the coagulation process.

The next day, degrease the liquid by removing the accumulated fat, and put the pot back on the heat. Remove the meat from the pot and portion it into bowls. Carefully strain the broth, ensuring that no impurities remain, and pour the liquid over the meat in the bowls. Place the bowls back on the balcony, but be mindful of the weather; if the temperatures are below zero degrees, your product will be compromised, and the aspic will not coagulate properly.

If you notice that the aspic does not have the desired texture, do not panic! You can add a packet of gelatin dissolved in cold water, mixing it well with the warm broth. Once it has cooled and set, it is time to decorate the aspic with a mixture of pepper and sweet paprika to give it an attractive appearance and delicious flavor. When served, you will be able to savor every bite of this traditional delicacy, perfect for any occasion!
