Preparation time: 20 minutes
Baking time: 25-30 minutes
Total time: 50-60 minutes
Number of servings: 28 (14 giant mucenici)
Ingredients for mucenici:
- 1.5 kg flour
- 4 eggs
- 500 g sugar
- 600 ml lukewarm milk
- 200 g melted butter
- A pinch of salt
- 50 g fresh yeast
- Grated zest from 2-3 oranges
- 1 teaspoon vanilla extract
- 1 teaspoon ground cardamom
- 1 teaspoon turmeric (for a beautiful color)
- 1 teaspoon orange blossom essence
- 1 teaspoon rum essence
- 5 egg yolks and 50 ml milk for brushing
Ingredients for syrup:
- 200 g brown sugar
- 150 g honey (or to taste)
- 800 ml water
- 500 g walnuts (ground)
Preparing the mucenici:
1. Sifting the flour: Start by sifting the flour into a large bowl, ensuring there are no lumps. This step is essential for obtaining a fluffy and airy dough.
2. Activating the yeast: In a small bowl, liquefy the yeast with a tablespoon of sugar and 100 ml of lukewarm milk. Let it sit for a few minutes until it becomes frothy. This will ensure good fermentation of the dough.
3. Preparing the dough: Add the activated yeast to the flour, along with the other ingredients – eggs, sugar, lukewarm milk, melted butter, salt, orange zest, vanilla, cardamom, turmeric, and essences. Mix everything with a spatula until the ingredients combine, then knead the dough for about 12 minutes. It is important to be patient and knead well, as this will contribute to the final texture of the mucenici.
4. Shaping the mucenici: Once the dough is well kneaded, take pieces the size of a ping-pong ball. Roll each piece into two strands, braid them, and then twist them into the shape of an eight. Place the shaped mucenici on a baking tray lined with parchment paper.
5. Doubling in volume: Let the mucenici rise in a warm place in the kitchen until they double in volume. This step is essential for achieving a fluffy result.
6. Brushing the mucenici: In a small bowl, mix the egg yolks with 50 ml of milk. Using a brush, glaze the mucenici with this mixture to achieve a golden and appetizing crust.
7. Baking: Preheat the oven to 180 degrees Celsius. Bake the mucenici for 25-30 minutes until they turn golden. The aroma that will fill your kitchen will make you eagerly await to savor them!
Preparing the syrup:
1. Dissolving the sugar: In a small pot, place the water and heat gently. Add the sugar and stir until completely dissolved. It is important not to boil the water, just to warm it gently.
2. Adding the honey: Once the sugar has dissolved, remove the pot from the heat and add the honey, mixing well. Taste the syrup and adjust the amount of honey according to your preferences.
3. Assembling the mucenici: When the mucenici are baked, remove them from the tray and place them in a large dish (enamel or Jena). Divide the syrup in two, pouring one part over each tray of mucenici. Let them soak well, turning them on both sides.
4. Decorating: After they have soaked, place the mucenici on a platter and sprinkle ground walnuts on top, to your taste. This will not only add a delicious flavor but also an attractive appearance!

Giant mucenici are delicious both warm and cold. You can serve them alongside a cup of fragrant tea or a glass of mulled wine, and for a special touch, add a few slices of citrus when serving.
