To create a delicious dish, we start with a mixture of yogurt that will add a creamy and flavorful note to our preparation. In a medium bowl, we will combine the yogurt with half of the chopped fresh parsley, fresh basil, and crushed garlic. This aromatic mixture needs to chill for at least 30 minutes for the flavors to meld and become more intense.

In the meantime, we turn our attention to the fish fillets. Wash them well under a stream of cold water, then dry them with a paper towel to remove excess moisture. Season them with salt and pepper on both sides, being careful not to overdo it, as the yogurt mixture will also add flavor. In a pan, heat the oil over medium-high heat and fry the fish fillets for about 1 minute on each side until they become lightly golden. Make sure not to cook them too much, as they will continue to cook in the oven.

Once the fillets are fried, carefully place them in a heat-resistant dish that you have previously greased with butter to prevent sticking. In another bowl, beat the eggs and add the sour cream, then incorporate the grated cheese, diced red pepper, and the flavored yogurt mixture. Season with salt and pepper to taste and pour this mixture over the fish fillets, ensuring they are completely covered.

Preheat the oven to a medium temperature and place the dish with the fish inside. Let it bake for about 30 minutes, but don’t forget to check occasionally. 10-15 minutes before it’s done, evenly sprinkle grated cheese and the remaining fresh parsley on top for a delicious crust. Continue baking until the fish is fully cooked and has a nicely browned crust.

Once the dish is ready, serve it warm, plating each fish fillet covered with the creamy sauce. Top with a few diced red bell pepper pieces and sprinkle some fresh parsley for a fresh and colorful look. This dish is not only an explosion of flavors but also a true feast for the eyes.
