Poppy Seed Cake with Caramelized Nuts and Oranges
To prepare a delicious poppy seed and walnut cake, we will start by gathering all the necessary ingredients. In a large bowl, we will combine the flour, poppy seeds, baking powder, and a pinch of salt. These dry ingredients are the foundation of our recipe, and the poppy seeds will provide a distinctive flavor and pleasant texture.
In another pot, we will melt the margarine over low heat. Once it is completely melted, we add the sugar, sour cream, and eggs. It is essential to mix the ingredients well, and to ensure that the sugar dissolves evenly, we will keep the pot on the heat, stirring constantly, without allowing the mixture to reach boiling point. When we notice that the sugar has completely melted and the mixture becomes homogeneous, we will pour the mixture in a thin stream into the bowl with flour and poppy seeds, stirring vigorously to obtain a fine paste.
After we have made the dough, we will transfer it to a cake pan, which we have previously greased with a little oil or margarine to prevent sticking. Now, we will place the pan in the preheated oven, where the cake will begin to develop a golden crust on top, a sign that it is on the right track.
Meanwhile, we will prepare the topping from walnut kernels. In a small pot, we will put 100 g of sugar, along with a small amount of water and a splash of lemon juice. We will let the mixture boil over low heat, stirring constantly, until the sugar takes on a light brown color. At that point, we will add the walnut kernels, which will absorb the caramelized flavor. We grease a cutting board with a little oil and pour the walnut mixture onto it. We let it cool, then cut the walnuts into small pieces.
At this point, we will take care of the orange. We peel the fruit and cut it into thin slices, which will add a fresh and tangy taste to our cake. When we see that the cake has developed a nice crust, we take it out of the oven and decorate the edges with the orange slices, while we place the chopped walnut kernels in the center.
The cake will return to the oven to bake evenly and let the flavors combine. When it is ready, we heat a little honey and, using a brush, apply a thin layer over the entire surface of the cake to give it an attractive shine. Thus, we obtain a cake that is not only delicious but also has a special appearance, perfect for enjoying with loved ones.
