Sea buckthorn jam
To prepare a delicious sea buckthorn jam, it is essential to follow a few simple but crucial steps. We start by carefully cleaning the sea buckthorn berries, making sure to remove any impurities. Once we are done, it is important to wash the sea buckthorn under cold running water to ensure they are clean and ready for use. After washing, we let the berries drain well to eliminate excess water that could affect the final consistency of the jam.
In parallel, we prepare the syrup. In an enamel pot, we add water and sugar, then place the pot over medium heat. We boil the mixture for about 5 minutes, being careful to remove the foam that forms on the surface to obtain a clear syrup. Once the syrup is ready, we add the sea buckthorn and lemon juice. The lemon juice not only prevents the jam from crystallizing but also helps maintain a beautiful, vibrant color.
We boil the mixture for 10 minutes, stirring occasionally to ensure the berries are well incorporated into the syrup. During this stage, it is good to skim again to keep the jam as smooth as possible. Once the time is up, we set the pot aside and let the mixture sit for 15 minutes. Now, it is time to transfer the contents to another enamel pot, covering it and setting it aside to develop its flavors.
The next day, we repeat the boiling process, allowing the jam to boil for another 10 minutes. After removing it from the heat, we let the mixture sit again for 15 minutes and transfer it once more to another pot, covering it and leaving it for 24 hours. This waiting stage is essential to allow the flavors to combine perfectly.
On the third day, we resume boiling, mashing the sea buckthorn berries with the back of a wooden spoon to release their juices and flavors. We continue to boil until the jam becomes glossy, changing its color from bright yellow to orange. It is important to perform the drop test to check the desired consistency, and when we are satisfied with the result, we remove the pot from the heat.
To finalize the process, we put the hot jam into sterilized and dried jars. We seal the jars and place them in a dry steam, between blankets, allowing them to cool completely, lid down. After they have cooled, we label the jars and store them in the pantry, where the jam will be kept to be enjoyed in various dishes, bringing a touch of nature and vitamins in every jar. Thus, we have obtained a delicious sea buckthorn jam that will delight taste buds at any time of the year.
