Homemade Ice Cream
To prepare a delicious dessert that will delight the taste buds, we start by separating the egg whites from the yolks. This step is essential to achieve an airy and smooth texture. The yolks are mixed with half of the total amount of sugar, fresh milk, vanilla essence, and soft butter at room temperature. We mix the ingredients well with a whisk or mixer to obtain a homogeneous composition. Then, we place the mixture on the heat, at medium intensity, stirring continuously to prevent sticking. It is important to be patient, as the butter will gradually melt, and the composition will begin to thicken. We continue to stir until the cream becomes thick enough, and it will pull away from the sides of the pot. Once we reach the desired consistency, we let the cream cool completely.
Meanwhile, we start to work on the egg whites. They are beaten with a generous pinch of salt until they become stiff and shiny. When the egg whites are almost ready, we gradually add the other half of the sugar, continuing to mix until we obtain a firm and glossy meringue. This meringue will give our dessert a light and airy texture. After we have achieved the perfect meringue, we add the yolk cream, gently folding it in with a spatula in an up-and-down motion to avoid losing the incorporated air.
Now, we divide the composition into two equal parts. Half of the obtained cream is transferred to a container and placed in the freezer to cool quickly. In the other half, we add cocoa, mixing gently again until completely homogenized. This portion of cocoa cream will bring extra flavor and an attractive appearance to our dessert. After achieving a uniform composition, we pour it into the second container and place it in the freezer.
After a few hours, the dessert will be ready to be enjoyed. This recipe is perfect for any occasion, offering a delicious combination of intense cocoa flavors and the delicacy of vanilla cream.
