Preparation time: 15 minutes

Our journey into the world of vegetarian meatballs begins with a versatile main ingredient – soy granules. These are not only an excellent source of protein but also provide a pleasant texture, perfect for creating tasty and healthy meatballs. Vegetarian meatballs are ideal for anyone looking to reduce meat intake or simply explore healthier culinary options. They are easy to prepare, and our recipe is simple and accessible, perfect even for beginners.

The history of meatballs is fascinating, as they are a traditional dish found in many cultures, each with its unique recipe. From meat-based to vegetarian meatballs, these delights have evolved and adapted over time, incorporating local ingredients and cooking techniques. Our vegetarian meatballs are a modern reinterpretation of a classic dish, combining taste and health on a plate.

Ingredients:

- 200 g soy granules
- 2-3 onions, chopped
- 5 slices of bread, soaked in water
- 1 bunch of parsley, finely chopped
- 1-2 tablespoons of paprika (sweet or hot, to taste)
- Salt, to taste
- Pepper, to taste
- 2-3 cloves of garlic, minced
- 1 egg (optional, to bind the mixture)

Instructions:

Step 1: Preparing the soy granules

Start by boiling the soy granules. Place them in a pot with water and let them boil for 10-15 minutes until they become soft. Once cooked, drain and rinse them under cold running water to stop the cooking process. Then, squeeze the granules well by hand to remove excess water. This step is essential, as overly wet soy will lead to meatballs that do not bind well.

Step 2: Sauté the onion

In a pan, add a little oil and sauté the chopped onion over medium heat until it becomes golden and soft. This step will add a rich and aromatic flavor to your meatballs. The sautéed onion provides a natural sweetness that will blend perfectly with the other ingredients.

Step 3: Preparing the meatball mixture

In a large bowl, combine the drained soy granules, sautéed onion, well-drained bread slices, chopped parsley, paprika, minced garlic, salt, and pepper. Mix the ingredients well until you obtain a homogeneous mixture. If you notice that the dough is too soft, add a little breadcrumbs to give it more consistency. If you prefer a firmer texture, you can add an egg. This will help the meatballs hold together during baking.

Step 4: Forming the meatballs

Moisten your hands with a little oil to prevent the dough from sticking and form equal-sized meatballs, about 4-5 cm in diameter. Place them on a baking sheet lined with parchment paper, which you have lightly greased with oil to prevent sticking. It is important to space them apart to ensure even baking.

Step 5: Baking the meatballs

Preheat the oven to 180°C (350°F). Place the tray in the oven and let the meatballs bake for 20-25 minutes until they become golden and crispy on the outside. Halfway through the baking time, turn the meatballs to brown evenly on both sides.

Step 6: Serving

Once ready, let the meatballs cool slightly before serving. They are delicious both warm and cold. You can serve them with a yogurt sauce, tzatziki, or tomato sauce for an extra burst of flavor. They are also excellent as an appetizer or snack.

Helpful tips:

- You can add other ingredients to the mixture, such as grated carrot or zucchini, to provide an interesting texture and enhance nutritional values.
- If you prefer a spicier version, you can add chopped chili pepper or chili flakes.
- These meatballs can be frozen. After forming them, you can freeze them on a tray and then transfer them to freezer bags. When the craving hits, you can bake them directly from the freezer, adding a few extra minutes to the baking time.
