Green peas with sour cream

If you are using frozen peas, there is no need to thaw them beforehand; just add them directly to the pan. Stir the peas constantly in the hot butter, allowing them to sauté for 5 to 7 minutes until they become slightly soft but retain their crunchy texture.
Once the peas are cooked, add warm water or, even better, a meat or vegetable broth, which will enrich the flavor of the dish. Let it simmer on low heat for about 10 minutes until the peas are fully cooked and have absorbed the flavors of the liquid. Meanwhile, in a small bowl, dissolve the cornstarch or flour in cold milk, mixing well to prevent lumps from forming. Then, add the sour cream and continue to stir until you achieve a homogeneous mixture.
When the peas are ready, pour the cream and milk mixture over them. Adjust the taste with salt, being careful not to overdo it, as the sauce will become more concentrated as the liquid evaporates. Cook on low heat, stirring continuously, without letting the sauce boil, until it thickens and becomes creamy, about 5 minutes.
To add a touch of freshness, finely chop the parsley and dill, then sprinkle them over the pea sauce, mixing well. If you prefer, you can add the herbs along with the cornstarch mixture to release their flavors during cooking. Once the sauce is ready, remove the pan from the heat and let the dish sit covered for a few minutes to allow the flavors to meld.
