Aroma Tart
A wonderful summer dessert, with fresh flavors of strawberries, mint, whipped cream, and of course, chocolate, that will delight your senses and bring a touch of coolness to hot days. We loved it so much that we made it twice in one week, sharing it with friends who were equally thrilled by its taste. To prepare this delicacy, we need a tart pan with a diameter of 24 cm.
We start by preparing the tart dough. In a large bowl, we mix the flour with the salt and sugar, making sure the ingredients are well combined. Then, we add the cold butter cut into cubes. Using a food processor, we mix the ingredients until the butter is partially incorporated into the flour, and the mixture becomes crumbly. We add 5 tablespoons of cold water and continue mixing. It is important not to obtain a completely homogeneous dough, so we gradually add the other tablespoons of water, mixing gently. After we have obtained a slightly sticky composition, we place the dough on a floured surface and form a ball. We wrap the dough in plastic wrap and let it chill for 15-20 minutes.
After the dough has rested, we roll it out with a rolling pin, making sure it is larger than the baking pan. Gently, we place the dough in the tart pan, arranging it well on the edges. We trim the excess dough from the edges and prick the bottom of the tart with a fork several times to prevent air bubbles from forming. We let the pan chill for half an hour.
After the dough has chilled, we place it in the preheated oven at 180 degrees Celsius. We bake the tart for about 15-20 minutes, until it turns golden. It is essential not to overbake it to avoid hardening. We let it cool completely, during which time we prepare the chocolate ganache.
For the ganache, we melt the chocolate together with the butter and heavy cream in a double boiler, stirring continuously until we obtain a dense and smooth composition. We carefully pour the ganache over the cooled tart and refrigerate it for about an hour to set.
While we wait, we whip the cream with the sugar until it becomes fluffy and light. We spread it evenly over the chocolate ganache, creating a thick and airy layer. On top, we decorate with fresh strawberries and mint leaves, which add a touch of freshness and an attractive appearance. We leave the tart in the refrigerator until serving. This combination of flavors and textures will turn each slice into a true delight. Enjoy!
Ingredients: Dough: 220 g flour, 180 g cold butter, 10 tablespoons very cold water, 2 tablespoons sugar, 1 teaspoon salt. Chocolate ganache: 50 g butter, 200 ml cream for whipping, 300 g chocolate (of your choice). Topping: 200 ml cream for whipping, 8 strawberries, 2 heaping tablespoons sugar, mint leaves.
