Preparation time: 3 hours (including cleaning utensils)
Baking time: 20 minutes for each layer
Total time: 3 hours
Number of servings: 12
Ingredients:
For a single layer (requires 3 layers):
- 2 egg whites
- 2 tablespoons of sugar (preferably powdered, homemade)
- ½ tablespoon of flour
- 50 g ground nuts (finely ground)
Cream 1 (of egg yolks and vanilla):
- 6 egg yolks
- 6 tablespoons of sugar
- 3 heaping tablespoons of flour
- 340 ml milk
- 170 g soft butter (at room temperature)
- Vanilla (essence, vanilla sugar, or extract)
Cream 2 (of whipped cream, caramel, and nuts):
- 200 g sugar
- 120 g ground nuts
- 200 ml liquid cream
Decoration:
- Cocoa
- Ground nuts
Necessary utensils:
- Blender
- Mixer
- Pan or pot
- Mixing bowl
- Cake pan (24 cm)
- Parchment paper
Step by Step:
1. Preparing the Layers:
Start by preheating the oven to 170 degrees Celsius. Now is the time to prepare the ingredients for the three layers. Grind the nuts in a blender until you achieve a fine powder and let the butter reach room temperature.
2. Whipping the Egg Whites:
In a clean bowl, beat the egg whites until they form a foam. Gradually add the sugar, continuing to mix until the mixture becomes glossy and firm. If using granulated sugar, ensure it dissolves completely in the egg whites.
3. Incorporating the Ingredients:
Sift the flour into the egg white mixture and add the ground nuts. Use a spatula to fold in the ingredients, being careful to maintain the airiness of the mixture.
4. Baking the Layers:
Line the cake pan with parchment paper and pour a quarter of the batter into it. Bake for about 20 minutes. Check with a toothpick to ensure it is not dry. Let the layer cool on a rack. Repeat the process for the other two layers.
5. Preparing Cream 1:
In another bowl, mix the egg yolks, sugar, and flour. Gradually add the milk, stirring continuously. Transfer the mixture to low heat and stir constantly for 6 minutes, until it thickens. Once the cream is ready, add the vanilla and cover with a lid to prevent a skin from forming.
6. Preparing Cream 2:
In a dry pan, place the sugar and caramelize it over low heat, being careful not to burn it. Once done, pour the caramel onto an oiled baking sheet and let it cool. After cooling, grind it in a blender.
7. Whipping the Cream:
Whip the liquid cream until it becomes firm and add the ground caramelized sugar and ground nuts. Gently mix to combine the ingredients.
8. Assembling the Cake:
Place the first layer on a cake platter and generously spread it with the egg yolk cream. Then sprinkle some of the whipped cream and caramel. Repeat this process with the other layers. The final layer will be the whipped cream, caramel, and nuts. Cover the edges of the cake with the remaining cream.
9. Decorating and Refrigerating:
Decorate the cake with ground nuts and cocoa. Let the cake chill in the refrigerator overnight to allow the flavors to develop.
10. Serving:
Serve the cake cold, cut into generous slices. Each piece is an explosion of flavors and textures, perfect for impressing family and friends.
Practical Tips:
- Ensure the egg whites are at room temperature for a firmer foam.
- Use high-quality butter for a richer and tastier cream.
- If you want to add a fruity note, you can layer banana or peach slices between the layers.
