Cauliflower pasta is a simple yet flavorful recipe, perfect for a quick dinner or a comforting lunch. This combination of ingredients offers an interesting texture and delicious aroma, making it an ideal choice for those looking to include vegetables in their diet. Here’s how to prepare this dish step by step.

Ingredients:
- 300g pasta (spaghetti, penne, or fettuccine)
- 1 medium cauliflower (about 500g)
- 3-4 tablespoons extra virgin olive oil
- 2-3 cloves of garlic, finely chopped
- 100g grated Parmesan cheese (optional)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
- Red pepper flakes (optional, for a spicy kick)

Preparation:
1. Start by washing the cauliflower under cold running water. Remove the leaves and cut the cauliflower into small florets. They will cook faster and integrate better into the pasta.
2. Fill a large pot with water, add a teaspoon of salt, and bring to a boil. Once the water is boiling, add the cauliflower florets and let them boil for 5-7 minutes until tender but still firm.
3. After the cauliflower is cooked, remove it with a slotted spoon and set it aside. In the same water, add the pasta and cook according to the package instructions, usually between 8-12 minutes, until al dente.
4. In a large skillet, heat the olive oil over medium heat. Add the chopped garlic and sauté for 1-2 minutes until golden, being careful not to burn it as it becomes bitter.
5. Add the cooked cauliflower florets to the skillet and mix well to coat them with oil and combine with the garlic. Let them sauté for another 2-3 minutes.
6. When the pasta is ready, drain it and add it directly to the skillet, along with 50g of grated Parmesan cheese (if using). Mix everything well so the pasta absorbs the flavors. You can add a little pasta water to achieve a creamier consistency.
7. Season with salt and pepper to taste. If you like a bit of heat, add red pepper flakes.
8. Serve the pasta warm, sprinkled with the remaining Parmesan cheese and chopped fresh parsley.

Practical tips:
- You can substitute Parmesan cheese with feta or ricotta for a lighter, creamier version.
- If you want a heartier vegetarian meal, you can add halved cherry tomatoes or black olives.
- For an even more intense flavor, replace olive oil with melted butter and add a few fresh basil leaves.

This cauliflower pasta recipe is not only simple and quick but also packed with nutrients thanks to the vegetables. It’s a perfect choice for any occasion, whether it’s a family dinner or a gathering with friends. Prepare it with love and enjoy a healthy and delicious dish!
