Ingredients:
For the dough:
- 500 g flour
- 5 egg yolks
- 80 g sugar
- 2 packets of vanilla sugar
- 50 g butter
- 2 tablespoons sour cream
- Zest of 1 lemon
- 3 tablespoons rum essence
- 1 cube of fresh yeast (25 g)
- 50 ml oil
- 230 ml milk
- 6 tablespoons sugar for caramelizing (in a 26 cm diameter pot)
For the filling:
- 100 g walnuts
- 100 g raisins
- 1.5 tablespoons cocoa
- 60 ml milk
- 3 tablespoons sugar
- 1-2 teaspoons rum essence
- 50 g fruit from jam, chopped (peaches, sour cherries, cherries)
Preparation:
1. Activating the yeast: In a small bowl, add 50 ml of warm milk, the yeast, 1 tablespoon of sugar, and 1 tablespoon of flour. Mix well and let rise for 10-15 minutes until a foam forms.
2. Preparing the dough: In a large bowl, mix the egg yolks with a pinch of salt. In a pot, heat the remaining milk, add the sugar, and stir until it dissolves. Let it cool slightly, then add the sour cream, lemon zest, vanilla sugar, egg yolks, and rum essence. Homogenize the mixture.
3. Incorporating the ingredients: In another bowl, sift the flour and make a well in the center. Add the milk mixture and the activated yeast. If using a bread machine, add the flour and yeast to the bowl, then start the dough program. If kneading by hand, mix the ingredients well and knead the dough for 10-15 minutes. Gradually add the melted butter, kneading continuously, then incorporate the oil.
4. Letting it rise: Cover the bowl with a clean towel and let the dough rise in a warm place for 1 hour or until it doubles in volume.
5. Preparing the filling: In a pot, bring the ground walnuts, milk, and sugar to a boil. Stir continuously until the sugar melts. Add the cocoa and mix well. After it cools, add the rum essence, raisins, and chopped jam fruit.
6. Assembling the sweet bread: On a floured surface, turn out the dough and gently press to release the air. Roll out a rectangular sheet about 1 cm thick. Evenly spread the filling over the entire surface of the dough, then roll it tightly.
7. Shaping the rose: Cut the roll into 8 equal pieces. Place the 8 rolls in the caramelized pot, cut side up, 7 around the edge and one in the middle. Cover and let rise for another 30 minutes.
8. Baking: Preheat the oven to 180°C (low heat) and bake the sweet bread for about 40-45 minutes, or until golden. Check if it is well baked by inserting a toothpick in the center; it should come out clean.
9. Inverting: After baking, immediately invert the sweet bread onto a wooden cutting board and let it cool completely.
