To prepare a delicious cake, we start with a regular sponge cake batter, which will be the base of this savory dessert. The eggs are beaten well with the sugar until we obtain a consistent foam, then the sifted flour and baking powder are gradually added, gently mixing to avoid losing air in the mixture. After achieving a homogeneous batter, we pour it into a rectangular pan lined with parchment paper. The sponge cake is baked in a preheated oven at 180 degrees Celsius for about 25-30 minutes, or until it passes the toothpick test. Once baked, we let it cool completely, then carefully cut it into two equal layers.

To add extra moisture and flavor, the first layer of sponge will be soaked with a delicious syrup made from water and sugar, boiled together until the sugar completely dissolves, then left to cool. Once the sponge is soaked, we turn our attention to preparing the cream. In a bowl, the eggs and sugar are placed and heated in a bain-marie, stirring constantly, until the mixture becomes creamy and starts to simmer lightly. Then, we let the mixture cool slightly, after which we add the gelatin, which has been previously soaked in 100 ml of cold water. It is essential to mix well to ensure that the gelatin completely dissolves.

After the cream has cooled, we add the whipped cream, carefully mixing from bottom to top to maintain the air in the cream. Finally, we also add pieces of fresh or canned peaches, which will bring a fruity and aromatic note. The resulting mixture is poured over the first soaked sponge layer, leveling it out with a spatula. Then, we place the second sponge layer, which we also soak, ensuring that the cake will be moist and tasty. The cake is left to cool for a few hours to allow the cream to set well.

To finish this savory dessert, we carefully turn the cake onto a platter. Decoration can be done with whipped cream, edible flowers, or a mix of fresh fruits, which will not only beautify the cake but also add a contrast of flavors. Thus, we obtain a refined and attractive cake, perfect for enjoying on various occasions or simply to indulge ourselves on an ordinary day.
