To prepare a delicious and flavorful chocolate, we will start by making a syrup from sugar and water. In a saucepan, we add one part sugar and one part water, then place it over medium heat. It is important to stir constantly to ensure that the sugar dissolves evenly. We will boil the syrup for as long as necessary, depending on the desired consistency. If you prefer a softer and slightly elastic chocolate, boil the syrup only until the sugar completely melts. On the other hand, if you want a firmer chocolate, leave the syrup on the heat until it reaches a thicker consistency.

In the meantime, we take care of the mixture of powdered milk and cocoa. It is essential to pass this mixture through a sieve to avoid clumping, thus ensuring a smooth texture for our chocolate. Once the syrup is ready, we add the powdered milk and cocoa mixture, stirring well with a wooden spoon over low heat. Subsequently, we will add the melted and cooled butter, continuing to stir until homogeneous.

To transfer the mixture to a tray, it is recommended to use a glass or metal tray, which we will grease with butter to prevent the chocolate from sticking. After pouring the mixture into the tray, we can add the walnut pieces. If we want the nuts to be more embedded in the chocolate, we can gently press them down with our fingers. It is good to bake the walnut pieces in the oven at a low temperature to enhance their flavor, and then remove the outer skin.

After we finish adding the nuts, we let the chocolate cool, preferably in the refrigerator, for about 30 minutes to an hour. After this time, we use a knife to score the pieces we will cut later. We let the chocolate harden further in the refrigerator, ideally for 2-3 hours or, for an even better result, overnight.

Once it has hardened, we take the chocolate out of the refrigerator and cut it into pieces. Each piece will be an explosion of flavor, with a perfect texture, suitable to be enjoyed alongside a cup of coffee or a fragrant tea.
