- 1/4 bunch of fresh parsley
- 1/4 bunch of fresh dill
- 2 hot peppers (optional, for extra heat)
- 350 ml of Panacris broth
- 2 bags of parboiled rice (about 400 g)

A brief history of the recipe

Red beans with sausages is a recipe that has evolved over time, with deep roots in the culinary traditions of various cultures. It combines the plant proteins from beans with the animal proteins from sausages, creating a balanced and flavorful meal. Dishes that include beans are appreciated not only for their taste but also for their nutritional benefits, providing an excellent source of fiber and protein.

Step by step for a perfect meal:

1. Preparing the ingredients: Start by peeling and finely chopping the two yellow onions. Make sure you have all the ingredients at hand to ease your cooking process.

2. Sautéing the onion: In a large pot, add the two tablespoons of sunflower oil and a little water. Add the chopped onion and sauté over low heat, stirring occasionally. Let it sauté for about 10 minutes until it becomes translucent and soft. This is when the flavors develop, so don't rush this step.

3. Adding the sausages: In the meantime, cut the sausages into medium slices. After the onion has been sautéed, add the sausage slices to the pot. Cook them over medium heat for 5 minutes, uncovered, to allow the sausages to brown slightly and release their flavors.

4. Seasoning: Season the mixture with freshly ground pepper, bay leaves, and dried thyme. Add the 4 tablespoons of zacusca and about 300 ml of water (or more, to taste). Mix well to ensure all ingredients combine harmoniously.

5. The red beans: Drain the 4 cans of red beans and rinse them under cold water. Add the beans to the pot, adding enough water to cover the entire mixture. Season with chopped fresh parsley and dill, as well as the finely chopped hot peppers if you desire a spicier taste.

6. Boiling the dish: Let the mixture boil for about 20 minutes over medium heat, partially covered. This time will allow the flavors to meld and the beans to heat through. If you notice the dish becoming too thick, feel free to add a little water.

7. Preparing the rice: While the dish is cooking, prepare the rice. Boil the parboiled rice according to the package instructions, adding a teaspoon of salt to the boiling water. The rice will be ready in a few minutes and will perfectly complement the bean dish.

Serving

Once the red beans with sausages are ready, serve them hot alongside the prepared rice. This combination is not only hearty but also full of flavor. You can add a salad of pickled cabbage with yellow onion and olive oil for a fresh and crunchy note.

Useful tips

- Variations of ingredients: You can experiment with different types of sausages or add other vegetables, such as carrots or bell peppers, to diversify the recipe.
- Storage: The dish keeps well in the fridge for 2-3 days, and the taste becomes even better the next day when the flavors have time to develop.
- Recommended drinks: This dish pairs excellently with a refreshing beer or a light red wine that complements the rich flavors of the sausages and beans.
