Apricot and Lavender Jam
To prepare a peach delicacy with lavender flavor, we will start with selecting the most beautiful and ripe peaches. Choose firm but well-ripened fruit to ensure an intense flavor. Once you have selected the peaches, blanch them in a pot of boiling water for about 30 seconds. This step will make it easier to remove the skin, which will peel off easily. After blanching, transfer the peaches to a bowl of cold water to stop the cooking process. Once cooled, peel them and cut them into small cubes to allow the flavors to combine evenly.
In a large bowl, add the peach cubes and sprinkle sugar over them. Mix well to combine the ingredients, then add vanilla essence. The vanilla will add extra sweetness and an enticing aroma. Cover the bowl with plastic wrap and let it sit at room temperature for 4 hours. This time is essential, as the fruit will begin to release its natural juice, creating a delicious syrup.
After 4 hours, you will notice that the peaches have soaked in their syrup. Use a fine sieve to strain the mixture, separating the peach cubes from the resulting liquid. This puree will be the base for your jam. While doing this, take the lavender flowers and place them in a cheesecloth bag, ensuring it is tightly tied so that the flowers do not escape during boiling.
Put the obtained puree in a saucepan over medium heat and add the bag of lavender. Bring the mixture to a boil for 15 minutes, stirring periodically to prevent sticking to the bottom of the pot. You will notice how the aroma of lavender begins to reveal itself, bringing a pleasant floral scent throughout the room. After 15 minutes, remove the cheesecloth bag from the saucepan and discard it, as its aroma has already been absorbed.
Fill sterilized jars with the hot jam, being careful to leave a little space at the top of the jar. Seal them tightly and turn them upside down, allowing them to cool completely. This process will help create a perfect seal, ensuring that your jam will last a long time. The subtle yet distinct aroma of lavender will transform every spoonful of this jam into a unique culinary experience. Use it sparingly, as a bit too much of this aromatic herb can be overwhelming. Enjoy it on a slice of toasted bread or alongside fine cheeses!
