Tripe soup is a true symbol of gastronomy, often associated with festive moments and the gathering of loved ones around the table. Although it may seem like a complicated recipe, tripe soup is, in fact, an art of patience and attention to detail, and the final result is worth every minute spent in the kitchen. Today, I will guide you step by step to achieve a delicious tripe soup, full of flavors and taste.

Preparation time: 2 hours
Cooking time: 1 hour
Total time: 3 hours
Number of servings: 10-12

Essential ingredients

- 3.5 kg beef tripe
- 1 beef shank (approximately 1 kg)
- 2-3 beef bones (about the size of a palm)
- 8-10 egg yolks
- 1 kg sour cream
- 3-4 pickled peppers
- 2 heads of garlic
- 1-2 onions
- 6-7 carrots
- 75-100 ml oil
- Salt (to taste)
- Vinegar (to taste)

Preparing the tripe

1. Cleaning the tripe: Start by thoroughly washing the beef tripe. It is important to remove any impurities and ensure it is clean. Place the tripe in a pot with water and vinegar (one part vinegar to three parts water) for better cleaning. Let it soak for 30-45 minutes.

2. Boiling the base ingredients: In another pot, clean and wash the beef shank, bones, onion, and 2 carrots. Boil them in a liter of salted water, bringing them to a boil.

3. Boiling the tripe: Remove the tripe from the vinegar water and wash it again under cold running water. Place it in another pot with water and salt, letting it boil over medium heat. When the tripe becomes tender (about 2-3 hours), remove it from the water and let it cool slightly.

Preparing the soup

1. Cutting the tripe: Once the tripe has cooled, cut it into long strips of 5-6 cm and 1 cm wide. Put the strips back into the pot where they were boiled.

2. Straining the broths: Strain the beef broth obtained from the shank and bones, then add it to the pot with the tripe. Clean the meat from the bones, cut it into small pieces, and add it to the soup as well. Let everything boil over medium heat for 30 minutes.

3. Adding the vegetables: Cut the pickled peppers into small cubes and add them to the soup. Grate the remaining carrots and sauté them in a pan with 75-100 ml of oil until soft. Add them to the pot.

4. Preparing the garlic sauce: Clean the garlic and, using a hand blender, prepare a fine garlic sauce. This will add an intense and delicious flavor to the soup.

Finalizing the soup

1. Mixing the ingredients: After 30 minutes of boiling, reduce the heat to low and add the garlic sauce. In another bowl, mix the sour cream with the egg yolks, stirring vigorously until smooth. Use a ladle to take a few ladles of soup and gradually add them to the sour cream mixture to prevent the eggs from curdling.

2. Combining the mixtures: Once you have homogenized the sour cream mixture well, pour it back into the pot with the soup, stirring vigorously to combine all the flavors.

3. Removing excess oil: Use a fine strainer to drain the sautéed carrots from the oil, placing them on top of the soup pot. Pour a ladle of soup over them and press with a spoon to extract the oil and color from the carrots. Repeat 3-4 times until all the color and oil are integrated into the soup.

4. Finalizing: Adjust the salt and let the soup simmer for a few more minutes (2-3 minutes) before turning off the heat.

Practical tips

- Buy pre-cooked tripe: It is recommended to purchase whole pre-cooked tripe, as this will save you a lot of time and will taste delicious.

- Temperature of ingredients: Make sure that the sour cream and eggs are at room temperature before use to avoid curdling.

- Garlic sauce: If you prefer a classic garlic sauce, you can prepare it normally, but make sure to strain it to avoid garlic pieces in the soup. Unprocessed grated garlic can turn green in the soup.

- Sour taste: The sour taste from the pickled peppers will intensify the next day. If serving immediately, I recommend adding vinegar to the plate, not to the pot with the soup.

Serving suggestions

Tripe soup is often served with sour cream, fresh chili peppers, and, if you like, with a little vinegar added. It can be paired with fresh homemade bread or crunchy croutons to complete the culinary experience.

Possible variations

- Mushroom tripe soup: You can add mushrooms for an extra umami flavor.
- Vegetarian tripe soup: Although not traditional, using mushrooms and various vegetables, you can create a vegetarian version that is just as tasty.

Nutritional benefits

Tripe soup is rich in protein due to the beef and egg content. Additionally, the sour cream adds healthy fats, while the vegetables contribute essential vitamins and minerals. However, due to the fat content, it is recommended to consume the soup in moderation.

In conclusion, tripe soup is a recipe that, although it requires time and attention, offers delicious rewards and unforgettable moments in the company of loved ones. With each spoonful, you will feel the tradition and love that underlie this unique dish. Enjoy your meal!
