Preparation time: 30 minutes
Baking time: 15 minutes
Total time: 45 minutes
Servings: 10
Ingredients:
- 300 g biscuits (preferably digestive biscuits or cocoa biscuits for an intense flavor)
- 150 g butter (melted)
- 2-3 tablespoons milk
- 600 g whipped cream (whipped with 35% fat for an airy texture)
- 150 g powdered sugar
- 20 g gelatin (preferably food-grade gelatin)
- juice from one lemon (about 30 ml)
- 400 g cream cheese (choose a quality cheese, such as mascarpone or Philadelphia)
- 1 kg strawberries (fresh and ripe)
- 200 g strawberry jam (for an intense flavor)
Instructions:
1. Preparing the biscuit base: Start by crushing the biscuits. You can use a blender for a fine crumb or a rolling pin, placing the biscuits in a plastic bag. Add the melted butter and milk to the biscuit crumbs and mix well until the mixture becomes homogeneous and slightly moist.
2. Forming the base: Line a springform pan with parchment paper and evenly distribute the biscuit mixture on the bottom of the pan, pressing down firmly to create a compact base. Bake the base in a preheated oven at 180°C for 10-15 minutes until it turns slightly golden. Allow it to cool completely.
3. Adding the jam: Once the base has cooled, spread an even layer of strawberry jam over it to add moisture and flavor.
4. Preparing the filling: In a large bowl, mix the cream cheese with the whipped cream and powdered sugar. In another container, soak the gelatin in 3 tablespoons of cold water, then gently heat it to dissolve completely. Add the dissolved gelatin, lemon juice, and puree made from 6 strawberries to the cheese mixture and mix until everything is well combined.
5. Assembling the cake: Pour the cheese filling over the strawberry layer, ensuring it is evenly distributed. Place the cake in the refrigerator for at least 3 hours, or until the filling has set sufficiently.
6. Finishing and serving: After the cake has set, carefully remove the sides of the pan. Sprinkle crushed nuts around the edge of the cake and decorate the top with halved fresh strawberries. This detail will not only add an attractive look but also enhance the fresh strawberry aroma.
Practical tips:
- Make sure the whipped cream is well whipped to achieve an airy texture for the filling.
- You can replace strawberries with other seasonal fruits like raspberries or blueberries to vary the cake's flavor.
- The cake can be served with a berry sauce or a scoop of vanilla ice cream for an even more decadent dessert.
