- 500 ml milk

- 50 g fresh yeast
- 400 g sugar
- 500 g finely chopped walnuts
- 1 packet of vanilla sugar
- 5 eggs
- 1 pinch of salt
- 2 tablespoons nesquik (for a special taste)
- 2 tablespoons lemon juice
- Zest of one lemon
- 1 tablespoon rum essence

Instructions:

1. Preparing the ingredients: Start by sifting the flour into a large bowl. Add the salt and gently mix with a spatula. This step will help aerate the flour, ensuring a fluffy roll.

2. Activating the yeast: In a cup, prepare the yeast mixture. Put ½ cup of warm milk, add the yeast, a tablespoon of sugar, and a tablespoon of flour. Mix everything and let it rise for 10 minutes. It is essential to use warm milk, not hot, to avoid killing the yeast.

3. Preparing the egg mixture: Meanwhile, separate the eggs. In another bowl, beat the yolks with the sugar (including the vanilla sugar) until the mixture becomes creamy and light in color. Add the lemon juice and zest, mixing well.

4. Beating the egg whites: Beat the egg whites until stiff peaks form. This step will add air and volume to the dough, contributing to the fluffy texture of the roll.

5. Combining the ingredients: Pour the very warm milk over the yolks and mix well. Add the activated yeast to the flour, then gradually incorporate the yolk mixture and finally the egg white foam. Don’t forget to add the rum essence to enhance the flavor.

Sprinkle the chopped walnuts mixed with nesquik over the surface of the dough. Roll the dough tightly, pressing the edges to seal the filling.
