To prepare a delicious meat medallion with mushrooms and cheese, start by preparing the pan. Place the pan on the stove and let it heat up a little. While the pan is heating, peel the onion, then chop it finely, ensuring you get uniform cubes so that it cooks evenly. After that, take the garlic, peel it, and chop it finely, as its flavors will add extra savor to the dish. The mushrooms are peeled and then sliced thinly lengthwise, after which they are chopped finely. These will add a pleasant texture and intense flavor.

In the already prepared pan, add the first two tablespoons of oil and put it on the heat. When the oil is hot, add the chopped onion and let it caramelize slightly, stirring occasionally to prevent burning. Then, add the chopped mushrooms along with a tablespoon of water and the chopped garlic. Cook the mixture for about 5-7 minutes, until the mushrooms lose their water and become tender. Season with salt and pepper to taste, add the mustard, mix well, and let it cook for another minute. Once the mixture is ready, take the pan off the heat, add the washed and finely chopped parsley, mixing everything well. Set the mixture aside to cool.

Meanwhile, prepare the slices of meat. If they are thicker, you can cut them in half, ensuring they are beaten thin, as for schnitzel. In a plate, put the flour and mix it with salt and pepper, then coat each slice of meat in this mixture, covering them evenly. In another pan, heat the three tablespoons of oil, and when it is hot, carefully place the slices of meat. Fry them on both sides until they become golden and crispy, then remove them to an absorbent paper to eliminate excess oil.

After the meat has drained, place the slices in a small baking dish, lightly greased with oil. On top of each slice of meat, add some of the mushroom mixture, and place a piece of cheese on top that covers both the meat and the mushrooms well. Preheat the oven and put the dish in to bake for a few minutes until the cheese melts and becomes golden, and the mushrooms look like they are in a savory pocket.

For serving, you can opt for creamy mashed potatoes or a fresh salad to complement this delicious dish. Personally, I chose to serve the medallion alongside a tomato salad, as the mushrooms and cheese already provide a wealth of flavors. It is a dish that will surely impress anyone who tastes it!
