To prepare this delicious fish meatball recipe with vegetables, the first thing we need to do is to carefully clean and wash all the ingredients. It is important to ensure that the vegetables and fish are fresh and of high quality, as they will influence the final taste of the dish. After cleaning the vegetables, we will chop the carrot and green onion into small pieces so that they cook evenly.

Then, we put a pan on medium heat and add 30g of butter. Once the butter has melted and started to sizzle, we add the chopped vegetables. It is important to cook them for a few minutes until they become slightly tender and release their flavors. Once the vegetables are cooked, we remove them from the pan and set them aside.

We continue with the remaining 30g of butter, which we heat in another pan. We add the fresh spinach and let it cook until it wilts. The spinach will add a rich flavor and vibrant color to our dish. After it has sautéed, we squeeze the spinach to remove excess water, as we do not want the mixture to be too wet.

In a blender, we add the fish, spinach, carrot, green onion, dill, and squeezed matzo. We blend everything until we obtain a homogeneous mixture. It is essential to ensure that the ingredients are well integrated to achieve delicious meatballs. After obtaining a smooth paste, we add an egg and season with salt and pepper to taste.

We form round meatballs from the mixture, being careful to make them of equal size so they cook evenly. Meanwhile, we prepare a vegetable and chicken broth, which will serve as a base for our meatballs. We bring the broth to a boil.

When the vegetables in the broth are cooked, we carefully add the meatballs to the hot broth one by one, so as not to destroy their shape. We let them simmer for about 10 minutes. Finally, we add lemon juice for an extra acidity and freshly chopped lovage to enhance the flavors.

The meatballs can be served with grated horseradish, horseradish salad with beetroot, or with a little broth, depending on everyone's preferences. This dish is not only healthy but also full of flavor, perfect for a comforting meal. Enjoy your meal!
