Ingredients:
- 2 large eggplants

- 2 eggs
- 200 ml milk (or sparkling water for a lighter version)
- Salt and pepper to taste
- Oil for frying (sunflower or olive oil, depending on preference)

Step 1: Preparing the eggplants
Start by washing the eggplants well under cold running water. Cut them into slices about 1 cm thick. You can choose round or lengthwise slices, depending on your preference. Sprinkle a little salt on the eggplant slices and let them sit for 15 minutes. This step helps to remove bitterness and excess water, as well as to achieve a firmer texture.

Step 2: Preparing the batter
In a bowl, beat the two eggs with the milk (or sparkling water) and a pinch of salt. It is important that the eggs are well incorporated to obtain a uniform batter. In another bowl, place the flour (or breadcrumbs) and add a pinch of pepper for extra flavor.

Step 3: Frying the eggplants
Heat a deep pan with oil over medium heat. The oil should be hot enough to fry the eggplant slices, but not so hot that they burn. Take each slice of eggplant, first dip it in the egg batter, then in the flour (or breadcrumbs), and carefully place it in the pan.
