To prepare a delicious rabbit with vegetables and potatoes, we start by ensuring that the rabbit is well cleaned. After washing it with cold water, we carefully cut it into suitable pieces. This is the essential stage that will influence not only the appearance but also how the meat will cook. While we are dealing with the rabbit, we turn our attention to the vegetables. We chop the green onion and red onion into small cubes so that they fit perfectly into our flavorful sauce. The sweet bell peppers are also diced, and we slice the garlic thinly to add an intense note of flavor.

In a deep pot, we heat 3 tablespoons of lard, which will add a rich taste to the dish. When the lard is well heated, we add the previously chopped vegetables and sauté them over medium heat, stirring constantly to prevent burning. The aroma that will spread in the kitchen will be simply irresistible. After the vegetables have started to soften, we add the pieces of rabbit, generously season with salt and pepper, and then let everything sizzle for a few minutes to seal in the meat's juices.

Now, to add a touch of color and an intense flavor, we sprinkle 1/2 tablespoon of sweet paprika on top. This will give the dish not only an attractive hue but also a special taste. We pour in enough water to cover the meat, then cover the pot and let it simmer on low heat. It is important to check from time to time if the water has not reduced too much, and if the meat is not well cooked, we can add a little hot water.

While the rabbit is simmering in its flavorful sauce, we dedicate ourselves to cleaning the potatoes. They are washed well and sliced into rounds so that they cook evenly. When we feel that the rabbit has been cooked for more than half the time, we add the sliced potatoes and a bay leaf, which will add a special aroma to the dish. We gently stir to combine the ingredients and let everything cook together until the potatoes become tender.

A few minutes before taking the pot off the heat, we also add the finely chopped green parsley. This will provide a fresh color contrast and a vibrant taste. We let it come to a final boil, and if necessary, we can add a bit of water to ensure that all the ingredients are perfectly cooked. Our dish is now ready to be enjoyed, each bite promising an explosion of flavors that will remind you of traditional meals.
