Ingredients:
- 1 large onion, finely chopped
- 200 g green or brown lentils, well washed
- 200 g chickpeas, canned or rehydrated (if using dried chickpeas, soak them overnight)
- 2 large tomatoes, finely chopped or grated
- 1 bunch of fresh parsley, chopped
- 1 celery stalk, finely chopped
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 1/2 teaspoon freshly grated or ground ginger
- 1/4 teaspoon saffron (optional, for added flavor and color)
- 2 tablespoons olive oil
- 1.5 liters of water (or vegetable broth for a more intense flavor)
- 100 g vermicelli or thin noodles (optional)
- Fresh lemon for serving
Instructions:
1. Start by preparing all the ingredients. Wash the lentils and chickpeas well (if using dried chickpeas) and chop the onion, parsley, and celery. This preparation will not only save you time but also make cooking more enjoyable.
2. In a pressure cooker, add the olive oil and sauté the onion over medium heat until it becomes translucent, about 5 minutes. This step is essential to bring the flavors of the soup to life.
3. Add the lentils, chickpeas, tomatoes, parsley, celery, salt, pepper, ginger, and saffron. Mix well to combine all the ingredients. This mix of vegetables and spices will give the soup a complex and comforting taste.
4. Pour water or vegetable broth into the pot, stirring to combine the ingredients. Make sure all the ingredients are covered with liquid.
5. Close the pot lid and bring to pressure. Cook for 25-30 minutes, then allow the pressure to release naturally. If using a regular pot, it will take about 1 hour to cook all the ingredients until tender.
6. Once the pressure has reduced, open the pot and check the consistency of the soup. If you want a thicker soup, add the vermicelli or thin noodles and let it boil for 5-10 minutes.
7. Taste and adjust the salt and pepper to your liking. Serve the soup hot with lemon slices on the side, which add a note of freshness.
