Ingredients:

- 2 large eggplants
- 2-3 cloves of garlic

- 60 ml freshly squeezed lemon juice
- 3-4 tablespoons of extra virgin olive oil
- Salt and pepper to taste

Instructions:

1. Preparing the eggplant:
- Preheat the oven to 200°C. Wash the eggplants and pierce them all over with a fork to allow steam to escape during baking. Place them on a baking sheet lined with parchment paper.
- Bake the eggplants in the oven for 30-45 minutes, until they are soft and the skin is slightly charred. Check if they are done by inserting a fork into them; they should be very tender.

2. Cooling and peeling the eggplant:
- After baking, remove the eggplants from the oven and let them cool for about 15 minutes. This will make peeling much easier.
- Once cooled, carefully peel the eggplants, removing the blackened skin. Use a knife to cut off the ends and chop the flesh into large pieces.

3. Preparing the dip:
- In a blender, add the eggplant flesh, chopped garlic cloves, peeled and chopped ginger (if you choose to use it), tahini, lemon juice, salt, pepper, and 2 tablespoons of olive oil.
- Blend the ingredients until you achieve a smooth paste. You can adjust the consistency by adding water or more olive oil, depending on your preferences.

4. Serving:
- Transfer the Baba Ganouj to a serving bowl. You can make a well in the center and add a tablespoon of olive oil and a sprinkle of smoked paprika for an attractive look.
- Sprinkle fresh chopped parsley on top for a color contrast and fresh aroma.
