To prepare a delicious Dobos cake, we will start by separating the eggs. It is essential that the egg whites are beaten until stiff peaks form, to ensure an airy texture of the layer. So, in a clean bowl, using a mixer, we beat the egg whites until they become firm and glossy. In another container, we will combine the egg yolks with the sugar, mixing them vigorously with a mixer until the mixture becomes a light-colored cream and doubles in volume.

Once the two mixtures are ready, we will carefully integrate them, folding them together with a spatula in a gentle up-and-down motion. At this point, we also add the sifted flour along with the baking powder, making sure not to form lumps. After obtaining a homogeneous dough, we turn our attention to the baking sheet. We spread the dough on a baking sheet, forming four larger layers, each with equal dimensions. These are baked at a moderate heat for about 6-7 minutes until they become golden and fluffy.

Meanwhile, we take care of the delicious cream. In another bowl, we mix the eggs with the sugar and the four tablespoons of water, continuing to stir until the mixture becomes an airy cream. This will then be transferred to a double boiler, where we will continue to mix until the sugar completely dissolves and the cream thickens slightly. After achieving the desired consistency, we let the cream cool for 2-3 minutes, then add the finely chopped chocolate. Using a whisk, we mix well until the chocolate completely melts and integrates into the cream, resulting in a rich and silky mixture. It is essential for this cream to cool in the refrigerator for a few hours to set properly.

After the cream has set, we take care of the butter. It should be well whipped, and then we gradually add the chocolate mixture, constantly mixing to obtain a smooth and homogeneous cream, perfect for spreading on the cake layers. Each of the four baked layers will be cut in half, resulting in 8 smaller layers.

Now, each layer is generously spread with chocolate cream and then carefully stacked. Finally, the Dobos cake can be decorated with grated chocolate or decorative candies, depending on everyone's preferences. This recipe will not only bring a smile to the faces of loved ones but will transform any occasion into a special moment filled with flavor and elegance.
