Roman Gnocchi (Gnocchi Alla Romana)
To prepare a delicious semolina gnocchi recipe, we start by putting milk in a pot, adding a pinch of salt and 50 grams of butter. We place the pot on the heat, allowing the milk to reach boiling point. It is important to carefully monitor the process, and before the milk starts to boil, reducing the heat will be essential. We begin to gradually add the semolina, encouraging continuous mixing with a whisk to avoid lumps. After a few moments, the mixture will start to thicken, and this is the sign that we can switch to using a wooden spoon. We will continue to stir patiently for 20-25 minutes over low heat, ensuring that the semolina does not stick to the pot and acquires a slight smoky flavor.
Once we finish mixing, we set aside the pot and add two tablespoons of grated Parmesan. We mix well to incorporate the cheese into the mixture. The next step involves preparing a damp tray, on which we will spread the cooked and warm semolina. It is important to wet our knife when leveling the semolina so that we achieve an even surface, with a thickness between 0.5 and 1 cm. After spreading the semolina, we let it cool, and then we will cut out discs using a glass with a diameter of 5-6 cm, thus forming the gnocchi.
On another tray, we lightly grease with butter and gather the remaining edges from the cut discs. We melt the remaining 50 grams of butter and carefully pour it over the edges of the semolina, sprinkling Parmesan to taste. We place the gnocchi discs on top, pouring the remaining melted butter and generously sprinkling Parmesan and, optionally, cheese. The amount of cheese can vary according to everyone's preferences, so let yourself be inspired by your taste.
The final step is to place the tray in the oven at a suitable temperature for about 30 minutes, or until the surface becomes golden and crispy. Once ready, we let the gnocchi cool slightly before serving. These semolina delights are excellent as an appetizer or a main dish, being a perfect choice for a family meal or with friends.
