Meat Cake

The meat cake is a traditional recipe, perfect for festive meals or special family dinners. This combination of chicken, liver, and cheese, wrapped in a crispy crust, promises to become a favorite for everyone. Let's get ready to discover a delicious and savory dish!

Preparation time: 30 minutes
Baking time: 70 minutes
Total time: 100 minutes
Number of servings: 8

Ingredients:

- 600 g chicken breast (for the outer crust)
- 500 g chicken breast (for the filling)
- 250 g chicken liver
- 100 g cheese
- 250 g ham (14 slices)
- 1 onion
- 1 bunch of fresh parsley
- 2-3 cloves of garlic
- 2-3 tablespoons of breadcrumbs
- salt, pepper, paprika
- oil for greasing
- 1 egg + 1 tablespoon of milk (for glazing)

Preparation:

1. Preparing the tray: Start by lining a loaf pan with baking paper, ensuring it exceeds the edges of the pan. This step will make it easier to remove the cake after baking. Grease the paper with oil to prevent sticking.

2. Preparing the meat: Cut 600 g of chicken breast lengthwise into large strips. With a meat mallet, gently pound them, being careful not to make them too thin. Season with salt, pepper, and paprika, then refrigerate to marinate.

3. Boiling the liver: In a pot, boil the liver in salted water. Once cooked, drain the liver well and let it cool before chopping it.

4. Preparing the filling: Cut 500 g of chicken breast into small cubes. In a skillet, sauté the finely chopped onion in a little oil until it becomes translucent. Add the chicken cubes and season with salt and pepper. Cook until the chicken is lightly browned and the liquid reduces. Let it cool, then chop the mixture in a food processor without turning it into a paste.

5. Mixing the ingredients: In a large bowl, combine the sautéed chicken, chopped liver, ham cubes, grated cheese, 3 eggs, chopped parsley, crushed garlic, and season with salt and pepper. Mix well, then add 2-3 tablespoons of breadcrumbs to achieve a denser mixture. If it seems too soft, add 1-2 more tablespoons of breadcrumbs.

6. Filling the ham: From the prepared filling, take 2 tablespoons and mix them with paprika. Then, on 12 slices of ham, place a bit of the filling shaped into sticks. The remaining 2 slices of ham will be filled with the mixture mixed with paprika.

7. Assembling the cake: Remove the chicken strips from the fridge and place them on the bottom of the pan, covering all sides to form a crust. Pour a thin layer of filling over the chicken strips, then place a row of ham sticks: 3 pieces on the bottom, one in the middle (the one with paprika), and 3 on top. This arrangement will create a beautiful appearance and add flavor.

8. Finalizing the dish: Cover the cake with the remaining filling and level it out. Place the remaining chicken strips on top, cover with baking paper, and place the pan in a larger pan filled with water halfway. This step will help maintain the moisture of the cake.

9. Baking: Place the pan in a preheated oven at medium heat (about 180°C) for 60-70 minutes. It is important to check the cake occasionally to ensure it doesn't burn.

10. Glazing: After the cake is baked, remove it from the pan and let it cool slightly. Remove the baking paper and place the cake in a clean pan, with another piece of baking paper, which we have drizzled with a little olive oil. Brush the surface of the cake with the beaten egg mixed with milk, then put it back in the oven on high heat for 8-10 minutes until it is nicely browned and golden.

11. Serving: Once the cake has completely cooled, slice it and serve it with yogurt sauces or fresh vegetables to complement the taste. It can be an excellent choice for a festive dinner or a family lunch.

Practical tips:

- Ingredients: Choose fresh, quality meat to make a tasty cake. You can experiment with different types of meat (e.g., turkey or pork) to vary the flavor.

- Sauces: A mustard sauce or a salad of tomatoes and cucumbers can perfectly complement this dish.
