- 3 tablespoons toasted sugar

Preparation step by step
1. Preparing the fruit
Start by washing all the fruit under cold running water. Be sure to drain them in a sieve to remove excess water so that your salad doesn't become watery.
2. Preparing the watermelon
Rinse the watermelon with water and, using a sharp knife, cut a calotte slightly above the halfway point. Using an ice cream scoop or a regular spoon, carefully scoop out the core of the watermelon, forming clumps of core. Place the core in a separate bowl, this will be the main ingredient in our salad.
3. Cutting the fruit
Peel and dice the kiwi fruit. Cut the apricots and nectarine into small pieces, after removing the stones. Slice the mandarin and keep them intact. The cherries keep the stems for a more elegant look and the grapes can be left whole.
4. Assembling the salad
Add the first layer of mixed fruit - kiwi, apricots, nectarine, tangerine, tangerine and melon core - to the inside of the cored melon. Drizzle with rum essence and dust with toasted sugar and vanilla sugar. Repeat this process 2-3 times, adding layers of fruit and sprinkling with rum and sugar until the melon is filled.
5. Decorating the salad
On top, add the watermelon clusters, a few cherries and grapes. Sprinkle dried or fresh mint for extra flavor and freshness.
6. Making the basket
Cut a thin slice from the other side of the melon and remove the core. Use it as a tortilette and pin it with two toothpicks in the melon basket for a special look.
