To achieve a refined and delicious dessert, I started by mixing the egg yolks with sugar, using a whisk or an electric mixer. It is essential to obtain a fluffy and light-colored mixture, which will add airiness and improve the final texture of the preparation. After obtaining a homogeneous cream, I gradually added the whipped cream, being careful to incorporate it gently, to maintain the volume. I placed this mixture on the heat, making sure not to let it boil, but to heat it slowly, so as not to spoil the structure.
Once I reached the desired temperature, I added the gelatin, which had been prepared beforehand by hydrating it in cold water. It is crucial for the gelatin to be well dissolved, so that it does not form lumps in the mixture. Next, I added the melted chocolate, which had been allowed to cool slightly, so as not to coagulate the warm mixture. The chocolate adds an intense flavor and an irresistible aroma, turning the dessert into a true delight.
After well integrating the chocolate, I whipped the egg whites until they formed stiff peaks, after which I carefully folded them into the mixture above. This will add extra airiness to the dessert, making it light and velvety. Finally, I added the yogurt, which not only enriches the taste but also provides a note of freshness. I mixed again with the robot to obtain a homogeneous mixture, without large air bubbles, ensuring that everything is well combined.
Once I obtained a fine and uniform mixture, I poured the composition into molds. I used a silicone mold for the white dessert, and for the black one, I chose a porcelain mold, which I covered with plastic wrap. This step is important because it helps maintain moisture and achieve a velvety texture. I left the desserts in the refrigerator overnight to set properly. This resting period is essential as it allows the flavors to develop and the dessert to achieve the desired consistency. The next day, I removed the desserts from the molds and admired the final result, preparing to serve them with joy.
Ingredients: 200g white or dark chocolate depending on what color you want it to be, I made 2 servings, one with white chocolate and one with dark chocolate. 2 eggs, 300ml whipped cream, 60g sugar, 7g gelatin, 150g plain yogurt, vanilla.
