Smoked Salmon Pancakes

If you don't have the pancakes ready, don't worry! You can make them according to your favorite recipe, as long as they are not sweet or flavored. They should be more savory or, for an extra flavor, even with a little dill in them. Making pancakes is simple: mix the flour, eggs, milk, and a pinch of salt to get a smooth batter, which you cook in a non-stick pan, resulting in thin and tender pancakes.

Once you have the pancakes, it's time to prepare the filling. The cream cheese will soften just enough to blend well with the minced garlic, salt, and pepper. This combination will give a savory taste and will perfectly complement the other ingredients.

On the work surface, place a piece of plastic wrap—this can be plastic, aluminum, or even parchment paper. Put a pancake on the wrap and spread some of the previously prepared cream cheese on it. Over the cream cheese, sprinkle the finely chopped green onion, making sure to use the white part in other dishes to avoid wasting anything.

On top of the onion, place a slice of smoked salmon, which will add a touch of refinement and flavor. A very light drizzle of lemon juice will enhance the flavors and provide a delicious contrast. Carefully roll the pancake, being careful not to tear it, and then wrap it well in the plastic wrap. Repeat this process for all the pancakes, then place them in a plastic bag and let them chill in the refrigerator for a few hours. This time will allow the cheese to set, making slicing easier.

When you are ready to serve, cut the pancakes into slices about 2 cm thick, preferably diagonally, for a more elegant look. Each slice can be secured with a toothpick and placed on lemon slices, which add a touch of freshness. Personally, if I didn't have enough pancakes or lemons on hand, I used the pancake slices as a border for a platter of stuffed eggs, thus demonstrating the versatility of this dish.

These delicious pancake rolls can be served in numerous ways, adapting to everyone's tastes. Sometimes, when I have more time, I also prepare a simple dill sauce, which is very liquid, and place the pancake slices over it, presenting them on small plates or in Chinese spoons. It is a perfect snack for parties or gatherings with friends. Enjoy!
