I propose a recipe for zucchini parmigiana, a delicious Italian dish, perfect for a light dinner or a healthy lunch. This version is lighter, thanks to the use of low-fat mozzarella and fresh zucchinis, which add a touch of freshness.
Ingredients:
- 1 kg zucchinis
- 4 light mozzarella (total 400g)
- 100 g grated parmesan
- 500 g cherry tomatoes
- 1/4 onion
- 2 cloves of garlic
- A handful of fresh basil
- Salt and pepper, to taste
- Extra virgin olive oil
- Half a jar of tomato sauce with basil
Preparation:
1. Start by preparing the quick sauce. In a skillet, add 2-3 tablespoons of extra virgin olive oil and heat over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until it becomes translucent. Add the crushed garlic and let it brown slightly, being careful not to burn it.
2. Add the halved cherry tomatoes and a handful of chopped fresh basil. Cook the mixture for 10-15 minutes until the tomatoes soften and a thick sauce forms. Season with salt and pepper to taste. If you prefer a smoother sauce, you can use a blender to puree it.
3. Meanwhile, wash the zucchinis and trim the ends. Peel them if you prefer, then slice them thinly, about 5 mm thick. These will be the delicious base of the dish.
4. Preheat the oven to 180°C. In a baking dish, add a thin layer of tomato sauce on the bottom. Layer the zucchini slices, followed by mozzarella slices and grated parmesan. Repeat the process until the ingredients are finished, making sure to end with a layer of sauce and cheese.
5. Cover the dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for another 10-15 minutes until the cheese is golden and bubbly.
6. Once the parmigiana is ready, let it cool for 5-10 minutes before serving. This will allow the flavors to settle and make portioning easier.
Serving suggestions:
Serve the zucchini parmigiana warm, garnished with a few fresh basil leaves. You can pair it with a crispy green salad or a slice of toasted bread to complete the meal. This recipe is also perfect as an appetizer or at a picnic, being delicious even cold.
