- 1 tablespoon salt

- 2 cloves garlic, finely chopped
- 1 small onion, finely chopped
- 1 teaspoon sugar (optional, to reduce the acidity of the tomatoes)
- Salt and pepper, to taste
- A handful of fresh basil leaves, chopped
- Grated Parmesan, for serving (optional)
Instructions:
1. Boil the pasta: In a large pot, add 1.5 liters of water, a pinch of salt, and a tablespoon of sunflower oil. Place the pot over medium heat and wait for it to boil. Once the water is boiling, add the pasta and cook according to the package instructions, usually between 8 and 12 minutes, until al dente.
2. Prepare the sauce: While the pasta is boiling, take a large skillet and heat a tablespoon of sunflower oil over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes until translucent, being careful not to burn them.
3. Add the tomatoes: Pour the diced tomatoes into the skillet, stirring well. If using fresh tomatoes, make sure they are peeled and finely chopped. Add a teaspoon of sugar, salt, and pepper to taste. Let the sauce simmer on low heat for 10-12 minutes, stirring occasionally.
4. Combine the pasta with the sauce: Once the pasta is cooked, drain it and add it directly to the skillet over the tomato sauce. Mix well to coat the pasta evenly with the sauce. Add the chopped basil leaves and let it cook for another 1-2 minutes to combine the flavors.
5. Serve: Divide the pasta among plates and sprinkle with grated Parmesan, if desired. For a touch of freshness, you can add a few whole basil leaves on each plate.
