- 100g ground nuts
- 100g sugar
- 1 egg
- 200g butter (at room temperature)
- 1 teaspoon baking powder
- A pinch of salt

*For the cream:*
- 3 eggs
- 150g sugar
- 100g dark chocolate
- 150g butter (at room temperature)
- 2 tablespoons cocoa (you can also add a bit of rum for a more intense flavor)

*For the glaze:*
- 150g dark chocolate (for decoration)

Preparation instructions

Step 1: Preparing the cookie dough

1. In a bowl, add the egg and sugar. Use a mixer to beat well until the mixture becomes creamy and doubles in volume. This is an essential step, as the incorporated air will make the cookies soft.

2. Add the softened butter and a pinch of salt to the bowl. Continue mixing until the ingredients are fully combined.

3. In another bowl, combine the flour with the baking powder and ground nuts. Gradually add this mixture to the egg and butter mixture, stirring with a spatula to avoid lumps.

4. Once the dough is homogeneous, cover the bowl with plastic wrap and refrigerate for one hour. This step will not only improve the texture of the cookies but also make the dough easier to work with.

Step 2: Baking the cookies

1. Preheat the oven to 200°C. Meanwhile, take the dough out of the fridge and place it on a floured surface.

2. Roll out the dough with a rolling pin until it reaches a thickness of about 5 mm. Use a cutter about 5 cm in diameter to cut out the cookies.

3. Place the cookies on a baking tray lined with parchment paper and bake for 15-20 minutes or until they are lightly golden at the edges. Let them cool on a rack.

Step 3: Preparing the cream

1. In a heatproof bowl, beat the eggs with the sugar over steam, stirring constantly until the mixture becomes thick like heavy cream, about 10-15 minutes.

2. Once the cream has cooled, add the melted chocolate and mix well.

3. In another bowl, beat the butter until fluffy. Add the cocoa and gradually mix in the egg and chocolate cream, stirring continuously until perfectly combined.

Step 4: Assembling the isler

1. Use a piping bag to apply an even layer of cream between every two cookies. Try to add a layer of about 6 mm, as the cookies will absorb some of the cream's moisture and will puff up slightly the next day.

2. After assembling all the isler, place them in the fridge to allow the cream to set.

Step 5: Glazing

1. Melt the chocolate for the glaze in a double boiler and let it cool slightly.

2. Dip each isler in the melted chocolate or use a spatula to apply a layer of glaze on top. Let the glaze set.

Practical tips

- You can add a few drops of vanilla essence to the egg cream for extra flavor.
- If you prefer, you can fill the isler with fruit jam, such as raspberry or apricot, for a touch of freshness.
- Make sure the butter used for the dough and cream is at room temperature; this will help achieve a finer texture.
