Welcome to my kitchen! Today, I will share with you a recipe for muffins and an appetizer tart, a perfect combination for any occasion, whether it’s a party with friends or a family dinner. This recipe is versatile and can be adapted based on the ingredients you have on hand. Let’s get started!

Preparation time: 30 minutes
Baking time: 25-30 minutes
Total time: 60-65 minutes
Number of servings: 12 muffins and 1 tart

Ingredients needed

For the muffins:
- 1 sheet of puff pastry (about 250g)
- 5 large eggs
- 150 ml yogurt
- 150 g flour
- 1 cube of butter (about 80 g)
- 1 teaspoon baking powder
- 1 red bell pepper, diced
- 6 slices of dried salami, diced
- 10 slices of chicken salami, diced
- 150 g feta cheese, crumbled
- 4 large slices of cheese, diced
- 150 g cheese spread
- Pitted olives, sliced (about 100 g)
- 400 g peas (fresh or frozen)
- 2 onions, finely chopped
- 200 g canned mushrooms, chopped
- Salt and pepper, to taste
- Rustic herbs (or other favorite herbs)
- Fresh parsley, finely chopped
- Sesame seeds, for decoration

For the tart:
- Leftover puff pastry and muffin mixture

Preparation

1. Preparing the ingredients: Start by thawing the puff pastry at room temperature. This step is essential for achieving a tender and easy-to-handle texture. While the pastry thaws, prepare the other ingredients: chop the cold cuts, cheeses, vegetables, and olives. Make sure all ingredients are diced or sliced so they integrate well into the mixture.

2. Sauté the onions and mushrooms: In a skillet, add a little butter and let it melt. Add the chopped onion and sauté for a few minutes until it becomes translucent. Then, add the chopped mushrooms and let them cook for 10 minutes, stirring occasionally. Finally, add a teaspoon of paprika (spicy or sweet, according to your preference) and mix well. Turn off the heat and let the mixture cool.

3. Preparing the mixture: In a large bowl, beat the 5 eggs well with a mixer. Add the yogurt, cheese spread, and melted butter. Mix well, then incorporate the flour mixed with baking powder until you get a homogeneous mixture with a consistency similar to sour cream.

4. Adding the ingredients: To the egg mixture, add all the prepared ingredients: cold cuts, cheeses, vegetables, olives, peas, and the onion and mushroom mixture. Mix well and season with salt, pepper, rustic herbs, and fresh parsley.

5. Preparing the muffins: Preheat the oven to 180°C. On a floured surface, roll out the puff pastry with a rolling pin until it becomes thinner. Using a glass or muffin ring, cut out rounds from the pastry. Grease the muffin molds with butter and place the rounds of pastry in them, folding them to fit. Fill each mold with the egg and vegetable mixture, leaving about 1/4 space at the top. Sprinkle sesame seeds on top.

6. Baking: Place the tray in the preheated oven and bake for 25-30 minutes or until the muffins are golden and pass the toothpick test. A toothpick inserted in the center of a muffin should come out clean.

7. Preparing the tart: With the leftover pastry and mixture, you can prepare a tart. Grease a tart pan with butter, place the pastry in it, pressing it with your fingers to fit the shape. Prick the pastry with a fork, then add the remaining muffin mixture on top. If desired, you can make a lattice from pastry to cover the tart, brush it with beaten egg, and sprinkle sesame seeds. Bake similarly to the muffins until golden.

Serving Suggestions

The appetizer muffins are excellent served warm or at room temperature. You can accompany them with sauces such as ketchup or remoulade sauce, which add a special flavor. Additionally, a fresh vegetable salad or arugula salad with cherry tomatoes is perfect to complement the meal.

Possible Variations

This recipe is extremely versatile! You can experiment with different types of cheese, adding feta or goat cheese for a more intense flavor. You can also replace the cold cuts with roasted vegetables or tofu for a vegetarian option.

Nutritional Benefits

These muffins and appetizer tart are rich in protein due to the eggs and cheeses, providing good nutritional value. Peas and vegetables add fiber and essential vitamins, making these dishes a healthy choice for a snack or appetizer.
