Carrot and apricot ice cream
To prepare a delicious and healthy dessert, we will start by carefully washing the apricots, ensuring they are fresh and free of any defects. After peeling them and removing the pits, we cut them into smaller pieces. Meanwhile, we take care of the carrots, peeling and slicing them into rounds or cubes, depending on preference. These will add not only flavor but also a pleasant texture to our dessert.
We load the carrots and apricots into a glass container with a lid, suitable for the microwave. We set the microwave to medium power and let the mixture cook for 5 minutes. If you prefer a traditional method, you can use a pot on the stove, adding 1-2 tablespoons of water to prevent sticking. After 5 minutes, we take the container out of the microwave (or off the heat) and add sugar over the carrots and apricots. We mix well to allow the sugar to dissolve and integrate into the syrup formed.
We return to the microwave for another 5 minutes or continue on the stove, stirring occasionally. It is important to check the consistency of the syrup and ensure that the fruits are well cooked. After these minutes, we can let the mixture sit for another 4 minutes, depending on the quantity, as cooking time may vary.
Once the carrots and apricots have cooled slightly, it's time to whip the cream. Using a hand mixer, blender, or food processor, we blend the carrots and apricots until we achieve a thick and smooth syrup. It is essential to work carefully to maintain a pleasant texture. After achieving the desired consistency, we add vanilla essence, which will provide an extra flavor.
Finally, we gradually fold in the whipped cream, gently mixing with a pear-shaped whisk to retain the airiness of the mixture. The resulting composition is transferred to molds, ensuring to leave some space for expansion during freezing. After filling the molds, we place them in the freezer and leave them there until the dessert becomes firm. This preparation is not only a delight for the taste buds but also brings a touch of health due to the natural ingredients used. In the end, we can enjoy a sweet masterpiece, perfect for warm days!
Ingredients: - 200 g raw carrots and mixed apricots... preferably baby carrots which are sweeter, but regular ones are fine if they are fresh (when they wilt, carrots become slightly bitter) - 150 g sugar (or 200 g depending on whether the cream is sweetened or not) - vanilla or vanilla sugar - 100 ml cream (I used vegetable cream)
