For this recipe, you will need the following ingredients: 500 g of cauliflower, 300 g of pasta (preferably penne or fusilli), 200 ml of milk, 100 g of cooking cream, 50 g of butter, 100 g of grated cheese (parmesan or mozzarella), a bunch of fresh basil, salt and pepper to taste. I advise you to choose a fresh cauliflower with compact florets and a pristine white color.

Start by preparing the cauliflower. Boil the cauliflower florets in salted water for about 10 minutes, or until they become tender but not too soft. After boiling, drain them and let them cool slightly. In the meantime, bring a pot of water to a boil for the pasta. Add salt and put in the pasta, cooking them according to the package instructions. Once the pasta is ready, drain it and set it aside.

In a large skillet, melt the butter over medium heat and add the milk, stirring constantly. Add the cream and continue stirring until the mixture becomes homogeneous. At this point, add the grated cheese and season with salt and pepper to taste. When the cheese has completely melted, gently fold in the boiled cauliflower florets, being careful not to crush them.

Meanwhile, we prepare the other ingredients. We grate the cheese, slice the ham, and chop the tomato. We wash the basil and tear it roughly. We put whole garlic cloves in some olive oil to sweat. It should not brown, as it will become bitter. If desired, leave the garlic in; if not, you can remove it later, as it is large. Over the hot, garlic-flavored oil, we add a tablespoon of flour and let it fry a little, but not too much (be careful, at high heat, it burns quickly). We extinguish the fried flour with milk. We season (depending on the ham) with salt, pepper, and dried oregano. We add the ham and basil, and mix a little. We let it simmer for a moment. The pasta is boiled in salted water. It should be cooked al dente, as it will soften more in the sauce. When it is half-cooked, we remove it and add it to the sauce. We place the cauliflower in a baking dish and pour this sauce over it. We sprinkle the cheese and decorate with tomatoes. We put it in the oven at 200°C for 20 minutes, then raise the temperature to 250°C and turn on the ventilation. When you think it is browned to your liking, turn off the heat, leave the oven door open, and let the dish sit there for another 5-10 minutes. It can be reheated before serving (oven or microwave).
