Mushroom Blinis
To prepare these delicious blinis with mushrooms, we will start by separating the egg whites from the yolks. It is essential to ensure that the utensils used are clean and dry, as the fat in the egg whites can prevent achieving a consistent foam. In a large bowl, we will combine the yolks with the milk and flour, then add salt, pepper, and rosemary. We mix the ingredients well until we obtain a homogeneous and fairly thick paste, with a velvety texture. This base will give the blinis a wonderful taste and an appealing appearance.
In another bowl, we will take care of the egg whites. We beat them with a mixer or a whisk until they become a firm foam, with well-defined peaks. It is time to gradually fold the yolk paste into the egg whites, using a spatula and mixing gently, so as not to lose the air in the foam. This technique will ensure the blinis have a fluffy and light texture.
Once the mixture is homogenized, we place the pan on the heat, letting it warm up. We add a little oil or butter to prevent the blinis from sticking. Using a spoon, we pour portions of the prepared mixture, making sure to space them apart, as they will spread. We cook each blini until it turns golden on one side, then flip it with a spatula to brown the other side. Once they are ready, we remove them onto an absorbent napkin to eliminate excess oil and let them cool.
Meanwhile, we take care of the mushrooms. We choose our favorite mushrooms, such as champignon or porcini, and slice or cube them according to preference. We sauté them in a pan with a little oil, stirring occasionally. When they become tender and release their aroma, we season them with salt and pepper to taste, and let them cool.
For a delicious sauce, we will combine mayonnaise with wasabi paste. We mix the two ingredients well to obtain a homogeneous and flavorful cream, which will perfectly complement the blinis and mushrooms.
