Cookies (Biscuits) with Poppy
To prepare this delicious recipe, we start by making sure all the ingredients are at hand. First, we take care of the dough. In a large bowl, we add the necessary ingredients: flour, soft butter, sugar, and a pinch of salt. We mix with a spatula or by hand until we achieve a homogeneous composition. It is important to pay attention to the consistency; the dough should neither be too soft nor too hard. If we notice that the dough is softer than desired, we can gradually add a tablespoon of flour, mixing well until we reach the desired texture. Once we have the ideal dough, we wrap it in plastic wrap and let it chill for about 30 minutes. This step will help the dough become easier to handle and prevent it from deforming during baking.
In the meantime, we prepare the filling. We take the poppy seeds and grind them finely using a mortar or a food processor. Then, we put the ground poppy seeds in a saucepan, add sugar and milk, and place the saucepan over low heat. It is important to stir constantly to avoid the mixture sticking to the bottom of the saucepan. After a few minutes, the mixture will start to boil and thicken. When the composition becomes creamy and the milk has reduced considerably, we turn off the heat and let it cool slightly. Finally, we add vanilla essence or flavoring, which will give the filling a perfect taste.
After the dough has been in the refrigerator, we take it out and roll it out on a sheet of parchment paper, forming a rectangular sheet about 0.5 cm thick. On top, we evenly spread the poppy cream, making sure to cover the entire surface. Then, we carefully start rolling the dough, forming a tight roll. This will be wrapped in parchment paper or plastic wrap to keep its shape. The obtained roll is placed in the freezer, where we leave it for about 20-30 minutes. This step is essential to ensure that, when cutting, the slices will not deform and will remain round.
After the time has passed, we take the roll out of the freezer and cut it into slices about 1-1.5 cm thick. These slices are then placed in a baking tray, taking care to leave a little space between them to allow for expansion during baking. We preheat the oven to an appropriate temperature and then place the tray inside. We let it bake until the slices become nicely browned and have developed a golden and appetizing crust. So, get ready to enjoy a perfect delicacy, ideal for serving at a festive meal or simply to indulge on ordinary days!
