Wash and dry the whole chicken thighs with a paper towel, making sure to remove any excess water. Generously season them with salt, pepper, and paprika, allowing the flavors to penetrate the meat well. Heat a little olive oil in a deep skillet and add the chicken thighs. Fry them over medium heat until they develop a golden and appetizing crust. Once they are nicely browned on both sides, remove them from the skillet and keep them covered to stay warm.

In the same skillet, add a few slices of sausage (if opting for chorizo, remember to remove the casing before slicing them thick). Fry the sausages for a few minutes until they become crispy and fragrant, then remove them from the skillet. Do the same with the ham, bacon, or pancetta, which will add a special flavor to the dish.

After removing the sausages, in the remaining oil, sauté the finely chopped onion and garlic. Let them cook over medium heat until the onion becomes translucent, spreading an inviting aroma around. Add the diced peppers and a bay leaf, sprinkling salt and pepper to taste. Mix the ingredients well and let them cook, stirring occasionally, until the peppers soften.

Reintroduce the fried meats into the skillet, allowing them to sauté together with the vegetables for 2-3 minutes. Then, add the browned chicken thighs and pour in the white wine. Let it boil for a few minutes so that the alcohol evaporates. After this, add the chicken broth or hot water, making sure the liquid does not exceed the level of the meat.

Now, you have two options to continue cooking. You can cover the skillet with a lid and let it simmer on low heat for 10-20 minutes. When it is almost ready, uncover, add some herbs, fresh peas, chili pepper (depending on preferences), cumin, and a pinch of cinnamon. Mix everything and let it simmer for another 15 minutes, during which the sauce will reduce and the flavors will intensify.

If you opt for frozen peas, let the sauce simmer on low heat with the other ingredients until it reduces by half, and in the last 5 minutes, add the frozen peas. Finally, check the taste and adjust with salt and pepper to your liking.

In the second alternative, transfer the vegetables, ham, and sausages to a heat-resistant dish, making sure to place the thighs on top. Pour in the wine and broth or hot water, then place the dish in the preheated oven, allowing it to cook for 10-20 minutes at medium temperature. After this time, add the remaining herbs, fresh peas, chili pepper, cumin, and cinnamon, then leave in the oven for another 15 minutes until the sauce reduces and the thighs become crispy on the surface.

Finally, check the taste again and sprinkle the remaining finely chopped parsley. Serve this dish warm, admiring the colors and flavors that combine all the ingredients. It is a perfect dish for a family meal or to impress guests. Bon appétit!
